They like it for sushi in Japan, where it's known as a unique white-meat fish with red flesh (a separate category from true red-meat -- tunas.) Be super interesting to try, have you?

Now I've heard them called a number of dumb names over the years from 'stud pompano', 'bugeyed guppies' and 'cratefish'. So one day I asked him why he called them 'Billyfish? And he said in his thick Arkansa accent, 'Cause my boy, there ain't nothing slimier than our current president except for maybe, that fish! Bill Clinton was the current president.
