Instead of this Motor you can connect water motor so whenever the ir sensor sense your hand the water will flow..

How to make it as a switch? Once it is triggered it should not turn off until a physical switch turned off?
I want to place it near the bike fuel control or near near the seat so if anyone sits or tries to steal petrol, it will sound an alarm blaring until someone comes and turns it off physically...
