Swiss Meringue Butter Cream
Ingredients
1 cup salted butter (room temperature)
1/2cup egg white
1 cup granulated sugar
1 tsp vanilla extract
1. 흰자와 설탕을 섞는다.
Beat the egg white and sugar
2. 뜨거운 물 위에 중탕 하며 설탕 결정을 완전히 녹이고 60-70도가 되면 불에서 내린다.
Put the bowl with egg mixture over a pot with simmering water. Heat the egg mixture to completely melt the sugar and when the temperature reaches 140 -160 F degree, remove from the pot.
3. 핸드 믹서로 머랭을 만든다. 그릇이 차가워질 때까지 약 10분 정도 단단한 머랭을 만들도록 한다.
Use an electric hand mixer to beat the egg mixture until the stiff peak is formed. It takes around 10 minutes.
4. 핸드 믹서로 계속 가동하면서 버터를 조금씩 넣는다.
Slowly add the butter.
5. 충분히 섞은 후 바닐라 향을 섞는다.
When the icing is mixed all the way, add vanilla extract.

i don't know why but everything was fine until i added butter. i wonder what's wrong.
Make sure the bowl and egg white and sugar mixture is cold! so the butter in room temperature doesn't just melt away!

How much gm of butter do you mean of 1 cup and how many eggs withe do you mean of 1/2 cup?
Armona Akter just crack your eggs in the cup and then you will see that.i think its a bout 5 egg whites
Armona Akter 1 cup butter is 227g of butter, and 4 egg whites(from large eggs) should be a 1/2 cup

hm, only thing that I can think of is that you need to make sure that egg white and sugar mixture is not hot or warm. It's better if the bowl is almost cold. Also use butter that was in room temperature. Hope this helps! :)
TrishaTMU make sure your meringue is not hot anymore. I usually add cubed butter straight from the fridge. It will curdle at first but it will turn into buttercream, you'll see!

You might want to use some salt then. when making sweet things, adding a bit of salt can enhance the flavor :)
Does it goes well on places hot and humid?
I would think so, but any butter icing can kind of 'melt' if it's too hot. I've learned that people tend to use meringue icing for hot weather outdoor weddings since they don't melt as much as full-on butter cream icing. I've never had this icing in hot and humid places so this is the best answer I can give you! :)

How many days can I store it
Shaalini Ravi you should be able to keep it in an airtight container for 3weeks but because it’s made with egg white and butter, i recommend only making the amount you need and use fresh butter cream. :)
