    I’m not a chef or Japanese knife guy yet. I’m used to pocket knives and Renaissance European daggers. But I do love fixing dull knives and understand the joy of restoring something old or abused.
    Years ago when I was first learning yo sharpen, my close friend had a knife with a chewed up edge. He had loaned it to a coworker who cut metal pallet strapping with it. It was riddled with 1-2 mm divots.
    It was so painful to see how wronged my friend was that I spent hours with ceramic stones grinding away to fix it. But weeks of spare time later it was razor sharp. So satisfying.

    Oh man, I know of a secondhand shop in a fishing village in Mie prefecture where my in-laws live. They have boxes and boxes of knives just like this. Literally hundreds of them. I purchased a couple of debas last time I was there for $5-10 each. The ones I chose were made by Masamoto, which I'm familiar with. I'll have to go back on my next trip and try to identify more of them.

    Wow! Now this is a video that I've been waiting for! I've restored 4 Debas already (because the large bevel makes it easy for me to sharpen it) but Im too afraid to grind away materials on my yanagiba because it's very thin. I'll definitely be waiting for all the videos where you restore all of this!

    I also purchase old Japanese knives on Ebay and then restore them. You save so much considering the quality level of these blades, they may be old but they are real work horses.

    Like so many others pointed out, yes, the one in 3:36 is an Aritsugu(有次), and a very unprofessionally Uraoshi-ed and deformed one at that.
    Definitely a nightmare for any of us kitchen knife enthusiasts.
    I don't even think it can be properly fixed without using one of the rolling belt thingies.
    Also from the absence of the prefix Tsukiji(築地), this is from the OG Aritsugu in Kyoto, not the Tsukiji Aritsugu in Tokyo.

    That was a great idea. So great that I got myself few used knives, of course not as expensive. Restoring is the funniest part. Only it will be interesting to be able to connect (a blog maybe) to find what in fact I bought (even if cheap) and exchange opinions on restoration.

    I really enjoy your show. I have been in the culinary industry for 30 years and I like the Japanese knives my favorite is the deba.     Hey Ryky, it's good to see You again. Great video, even though it played two times. I love the idea, to restore old knives and make them useful again.
    I was thinking of doing restorations myself. It seems like a good souorce of practise and fun. But I can't find any old japanese knives, to restore. Would You happen to know, where just some guy could be getting old knives from? Thanks for being You Ryky, keep going

      Not sure how you would feel about it, but ebay has people selling random lots of Japanese knives. Might be worth a look. I've considered it myself before.

      @@davesmith5656 Yeah, I already do the sharpening and repairing for my friends knives. But, since they aren't chefs like me, or knfe enthusiasts, they only have their run-of-the-mill kitchenknives. And those aren't really that exciting to work on. I do it gladly, but I don't think, it compares to restoring an old japanese knife.

      @@johnniemiec3286 I thought the same, about looking on ebay. And it would be totally ok with me. If only, the knives that are available to me, were any good. All the offered knives are pretty mundane, not very interesting, or downright bad. They woulnd't make good gifts, or knives, that would last a long time. Also, they come only from one, or two sellers, who don't give any useful details about them. There doesn't seems to be a great market for old, but still high quality japanese knives, where I live.

    Hi Ricky, these are awesome! It sounds like you are going to replace all the handles? If so, why?? Most of those are as restorable as the blades. Old wood looks much nicer than new ones, once restored. I did some on these type of knives with odies oil and I love the results. Just curious. If lack of expertise is the issue I’d love to collaborate. Thanks for the video

      There will also be a lot of rust in the hole, so reusing them will quickly deteriorate the tang. (I have restored old japaneses knife myself). The hole also need to fit the tang perfectly so water and contaminants cant enter the handle.

    Any way I can ask if you have any tips on securing blades in such condition? I want to practice more of the restoration and profile changing aspects. I was just wondering if you had any tips on how another could do the same as you did here just smaller scale. Secure damaged blades fit for restoration and repairs and worth doing so to?     I was looking online for knives just like those at time I got the alert for the video. I was only looking for like 1 to 4 knives like this so I can practice on and as a slight cheaper way to get a good knife

    Good video, can you pls make a video on the satake houcho japanese santoku knife. It is a budget knife for around 30-50 dollars that didnt find any reviews on and I dont know wy because it seems to be a really good knife

    @22.50 that takohiki kanji looks like aritsugu to me.
    For the special masamoto it's typical for sushi chefs to at that curve at the end for a slicing motion. It's a personal touch someone can add to the blade.

    4:00 Aritsugu 有次 it look like aフグ引 Fuguhiki but not sure it from Nishiki Market or Tsukiji market.
    The kanji of Masamoto is 正本.

    Thats an amazing project bucket, I would love try restoring blades like this!! Do you know where I could get a real Japanese Chuka bocha or nakiri to retore i bought 2 only to find out they were fake? I have been trying to find knifes to work on. Is it only me or is the video doubled up? 30min video because it plays twice?

      It would be awesome if he could sell some knives that need restored with the kind of skill level it would take to restore them. I would like to buy an easy to restore knife but I bet there are other people that would like to buy a challenging restoration.

    Hello, you have a 210mm aogami gyuto from HONMAMON in your amaz0n picks.
    The very low price of 90$ is very irritating to me and it kinda gives me a feeling of lack in quality or something. On their homepage it’s just 64 bucks.
    Would you still recommend it? Please help me, master.
    I’d love to own a Japanese aogami knife for my cooking and I live in Germany. Returning a knife would be very difficult for me and I want to be sure. My budget isn’t the highest either but I want to use the knife for several years.

    I bought an old Nakiri from Japan off Ebay for $50.00 just needed a clean up and a good sharpen it is insanely sharp could do with a polishto make it pretty
    being left handed makes it difficult to find good second hand single blade knives, Next one I want is a Sujihiki, Will be watching the restorations with interest
    hope to pick up some tips.

    Excellent idea for charity and for a lot of other good reasons because, by means of restoration, you show respect for the quality work of the past and making that quality available for future use while, in the process, improving yourself.     Son got me a Japanese kitchen knife for Father's day.

    My GF is Japanese and has family in Japan... If I would be interested in importing some of the knives to try to restore myself, where could her family look to find such quality knives? Around Tokyo area preferably/Koga City. Any idea? Best regards, Ryky!
