If I could give you some advice because I have been there. Can you put a flexible door seal on the bottom of your doors. It would help keep out bugs and other critters not to mention the cold and heat. Just saying 😊😊. Love that you guys are doing repairs to the convent. What you are doing is great.

I have not read all of the other comments but I am watching your Dad and friend taking down walls on the second floor (1st for UK) and I am wondering if you considered taking down those floating existing walls and rebuilding the space with the hallway running up front (including the front courtyard windows). This would allow you to build large beautiful hotel rooms with more privacy toward the back, with the en suites installed however you choose.

Never thought to mention much earlier, I have seen people that have buildings with high ceilings put a couple fans on the ceiling and put them on a low setting to gentle push down the heat which mixes with the lower cold temperature, can be very effective and not noticeable to people in the room.
BILLY! I was thinking (I know dangerous!). Ofcourse after research on availability of such places in your town and towns around you. I know so many companies that look for smaller spaces to hold say company seminars or presentations but all your spaces are massive what if unstairs in the suits you make it possible to join together two suits so it can hold say 50 people (seating) with projector/tech capability. Would need seperate wire so can be used stand alone. I was thinking a sliding pocket door/wall that just folds away and right away you can flex the space. Maybe that could be downstairs dividing the big room into two smaller ones. The projector can fold away inside cabinets. Thought might be worth mentioning before you finish the rooms.
Is the main entrance really the first thing that people are going to see? Would that not be the reception area, preferably in the vicinity of a working elevator to bring luggage up to the rooms? Toting baggage through the kitchen or dining room and library does not seem practical
Those gaps under the door will bring in a cold draft in the winter months. The hallway will be so cold, and the heating bills enormous. Is there something you can do?
Simon n Yanis must get bored with plastering but still just crack on. The bedroom area that Rick is demolishing, could you just plaster board the inside of the rooms and leave the beams exposed in “ the corridor “?
Quick question for Simon, can you show ow you do the inside and outside corners? I am giving it a go at home and doing a reasonable job on it, but I have a hard time doing inside corners with plaster.. Or am I doing to much and should I do one wall at the time? Thanks!
Yanis should be carrying those bags of cement/plaster on his shoulder and not cuddling them. He will suffer with a bad back if he continues to do so. Better still, get a small flat bed trolley. I'm sure Brico must stock them.

Great to watch as always just a question from a novice. When you dot and dabbed the plasterboard should you not have left a little gap at the bottom behind the skirting to stop rising damp?
Wouldn’t it be nice if you could find out if any of the nuns who lived there were still alive and to have them visit and tell us what it was like when they were there?
why do you plaster the whole wall? we only plaster then sand nail parts and seams corners. sand as smooth as a can be level with the walls. the prime and paint. great job.

I was wondering about that as you can see daylight under the doors. I just assumed they hadn't gotten to putting foam or whatever in that space yet.
