While they can stay on the counter, for freshness, I prefer to refrigerate! They last in the refrigerator in an airtight container for 2 weeks or in the freezer for 3 months! When you pop them in the freezer, they don't take long to defrost - just a couple of minutes!
Hi Emma! The two flours absorb liquid differently - so it won’t work with all coconut flour. If you’re trying to keep it grain-free, I just tested swapping the brown rice flour for buckwheat flour and it works well. If you make that swap, though, just pull back to 1 1/4 cups buckwheat flour (vs the original 1 1/2)! Hope that helps :)
