Sumac berries lend themselves to use in a lemony-earthy flavored spice, or use them immediately to make a tangy and refreshing beverage. Chef Nico Albert (Cherokee Nation) is a self-taught chef, caterer and student of traditional Indigenous cuisines based in Tulsa, Oklahoma.
This video appears as part of Native America, a four-part series that explores the world created by America’s First Peoples. Reach back 15,000 years to reveal massive cities aligned to the stars, unique systems of science and spirituality, and 100 million people connected by social networks spanning two continents. Premiered October 23, 2018.

Thank you for this video! I married a Persian woman many years back, and Sumac plays an important culinary role in their culture as well. It is typically used a a finishing herb on roasted meats. It is DELICIOUS! I will try your beverage recipe for this.

Y'all are just adorable together. I'm happy to see you passing on our foods, traditions onto your children. So many can't see what is in nature all around them.

Man, I've been trying to master this for 3 years & I still can't get it right. Even stranger, once I actually got a yellow drink & I've never been able to replicate it. Last couple of years, it's almost like no matter how much sumac cones I soak, it's practically flavorless.

I'm sure this isn't helpful this year but try getting to them before the first rains after they ripen! the rains wash away the flavour on the outside of the berries

@@Ben-kv7wr oh! Thank you, then, that makes sense. Yeah, we just had a torrential downpour today. They actually looked like they were coming in early this year, so maybe I should have picked them last week? Usually, I wait until August.

I have known for a long time that one can make sumac "lemonade", so thanks for the "refresher" on how to make it. I love to see them in the fall when the leaves turn bright red. I have seen recipes calling for sumac grown in Asia and the middle east. Is it the same variety as in Canada and the US? I ask this because it seems the recipes and uses are the same.

How invasive is Smooth or Staghorn Sumac? I was thinking of growing it along my chain link fence line for privacy, but I have no idea regarding whether it will become a problem plant due to invasiveness. How tall does it get? Could it be a good plant to grow? I wonder if I could utilize it for profit.

They're tall trees. Tall but skinny. Bushy.

Smooth and Staghorn sumac are not invasive in the eastern part of North America, they’re native. Very friendly plants imo!

If you do it this way it's too tart you need to add sugar. Just do sun tea with the whole sumac plant.. no bitterness
