I like to switch the sounds up while I'm composing and programing drums so my ears don't get too used to hearing the same exact thing. Sometimes things like hat and snare rolls are distracting when you're trying to do stuff. That's why I generally wait to add rolls until the end right before mixing. I just get the main pattern down then create variations of that during structuring.
