    it helps to roll the log as you cut, instead of cutting downward. less breakage, and the cookie stays rounder 😊

    as someone who's been making cookies for 25 years, this is my almost-favorite. in the NYTimes you can find the World Peace version "2.0" and I find this version the very best. 2.0 version simply adds dried berries and cocoa nibs. (I also add in shopped pecans, 1/8 teaspoon of nutmeg, and about 1 teaspoon more of cocoa powder for a bit stronger chocolate flavor.) Superb!! crispy, chewy, salty, chocolatey, really satisfying, happy friends!
    (This is the only American cookie recipe that i don't have to reduce the sugar by 20-40%.)
    Merci, Pierre et Dorie!

    i've been making these cookies for the holidays for oh, 8 or 10 years and no matter how many i make it's never enough. people go crazy over them. be sure to use authentic fleur de sal and watch out for other recipes online that short some of the butter, that will get you a crumbly mess.

    Thanks for this, I just recently made this and it turned out so delicious. I find it not too sweet which I like very much. It's crumbly and airy and not sure if that was a good thing or I made a mistake in my mixing. Also I didn't have a large oven like most peeps do so I used my toaster oven. I can't get it to heat up to 325 F when set to 325 F so had to set it to 375 F so the oven thermometer would indicate 325 F. 🤣🤙

I measured from the tip of my thumb to the tip of my pinkie as she shows at 5:05 I have very long fingers and the measurement is exactly 8 inches .. so now I know when I make these : ] ) Again.. thanks so much for the awesome recipe and instruction !

    I am a free-wheeling baker but after watching this video I did something I rarely do, I followed the recipe to theee LETTER. I think if I hadn't watched the video I might have missed out on the importance of the instructions. I am so glad I did because these cookies are very special and even though I have a high tolerance for sweets I ate one cookie and I was satisfied. My Kitchen Aid mixer came with a plastic lid-like accessory which I used but still covered with a towel as instructed at around 2:58. There was a stray cocoa burst but very little got out. This is to say if I hadn't followed the instructions it would have been everywhere. As I write this I realized I did stray from the recipe I used chocolate chunks (not chips) rather than chopping my own chunks. Chopping chocolate along with removing rosemary from its' branches are kitchen tasks that make me sad and weepy. And I used wax paper rather than parchment (I like to save the more expensive parchment for actual baking, and the last variation is I rolled it by hand rather than use the method shown in the video around 5:14. These are possibly the best cookies I ever made!

    I want to try to make these. I have a fan forced oven does anyone know if the 325f (162c) is what I set it to? Or is the temp given for a normal oven and I should lower the temp by 20 degrees?

    I made these today - I dont know is it because I had high hopes, but they are not even slightly good... I usually loooove cookies, love baking them, I bake them every few days and I often try new recipes. These spread A LOT, I got flat cookies. and they were very very soft. I was hoping to take them to work tomorrow, but now I dont know what to do with them. I mean - they are edible, but my coworkers expect best from me, so I am not taking these on work.

    Warning tldr (too long, don’t read); not trying to be a troll. That’s a high bar to set when chocolate is strongly associated with child labor in the developing world (furthest thing from world peace). & phrases like “you want...” makes one look silly when there is know way this lady would know what I want unless she is telepathic. I’ve seen clips before of this awarded cookbook author, but... (holding my tongue/biting my lip because mom raised me to say nothing if there’s nothing good to say. Doesn’t necessary mean it’s bad, but, definitely not good. Questionable, at best.)

    • @tomohitokawakami
      @tomohitokawakami 5 лет назад

      Bonnie Phan Mom failed @ many things when it came to raising me, but clearly from my tone of the comment the take away is not negative, at least it shouldn’t be. Just observations. Unless you thought my observations did have a point and that a content creator of her caliber had room to improve... see, if that tone of delivery/persona is how she appeals to her audience & earns her cheddar, more power to her. Also, I had to see it again while I was responding to what I could gather as a rather pointed comment (wouldn’t rush to judge, maybe how brief...) & with this second pass, I got more questions. Was that an Asian relation that she dragooned to possibly... (another technically A-/Asian C+ in holding back what I wanna say. Mom would be proud. After all she wasn’t a tiger mom, or at least she didn’t think of herself being one...) dL keeping it💯ish

      Honestly, it's a cookie for goodness sake, just a cookie....you need a different platform to share your views on. Remember, it's just a cookie.

    • @tomohitokawakami
      @tomohitokawakami 5 лет назад

      M Lewis So... I will respond to anyone who will not let “lying dogs lie”. You could have left this seemingly “insignificant but real whisper into the void” alone but you took time to respond/poke the bear. How much gallons of water do you think sugar, wheat, alfalfa, soy, & the raising/rearing of dairy cows costs? All this without transportation or the human/communities it burdens factored in. You’re right it’s just a cookie. “Why it gotta be black though...” now replace black with, you guessed it... peace. I’ll give you “world”, nothing against “glocalism” considering most good things come from the tropics/subtropics. Vanilla, cacao, sugar, etc. Classic case of paradox of plenty/“abundance”. World cookie would have been fine... I guess. Which is why I preface my initial comment “ tldr (too long; don’t read) not trying to be a troll/trolling...”
