In my opinion, vegetable is sometimes called "小菜" in Chongqing dialect, the original "小面" doesn't go with any meat, only veggies, this is the reason. If you're still in Chongqing, try "晓小面” in Yanghe, huangnibang, Jiangbei district. As a local who used to research in this areas for ages, thats the best I've ever had

波波跟你解释为什么叫重庆小面哈。“小”面的“小”就是简单（simple）的意思，就是素（vegan）的意思。因为以前生活不够富足的时候，吃面加肉的topping比较少。所以真正的小面就是素面哦！现在最多加一点肉沫（mince）😊

叫小麵兩種可能，一種是解饞就像小吃，畢竟南方是米作主食，另一種小可能是簡單，小麵只有麵跟調味料，連高湯都沒有

小面是指以葱蒜酱醋辣椒调味的麻辣素面。而在老重庆的话语体系中，即使加入牛肉杂酱，排骨等豪华浇头的面条也称作小面，如：牛肉、肥肠、豌豆杂酱面等。但如果你去小面馆不说其他的就是默认是红油素面。
是吗？这是外地人给我们重庆小面的定义吧，我们老重庆话小面也就只是素面，其他都是牛肉，肥肠，杂酱面这么叫！你这个小面定义是重庆火起来后的定义。
