I've had to do this a few times. One thing that can help with matching the output of the two mixers is starting with the mixer's output turned down, swapping the first channel, setting your gain to a comfortable level, then turning the mixer up until the swapped channel matches the level of the other mixer, then swapping the 2nd channel. This also at least saves you from the pops and clicks of the first channel swap. If the new mixer has Pan control, you can use it to minimize the 2nd channel's clicks, swap the first, turn your pan all the way to that side, swap the 2nd, return the Pan to the center.

Or have multiple line inputs on your soundsystem's dsp or analogue sigal chain, if a changover is needed you can just start playing second turntable on replacement mixer then switch other turntable over.
