  • Pork vindaloo has Portuguese roots and was adapted by Goans using local ingredients. Here we are making it in a roasted form. So let's get started.
    Ingredients (For grinding)
    Dried red chillies : 5 nos
    Moringa bark: 4 - 5 small pieces
    Vinegar : 4 tbsp
    Chilli powder : 1.5 tbsp
    Coriander powder : 1.25 tbsp
    Turmeric powder : 1 tsp
    Fennel seeds : 1.25 tbsp
    Cardamom : 5 nos
    Cloves : 2 nos
    Mustard : 1 tsp
    Cinnamon : 4 small pieces
    Black pepper : 2 tsp
    Water : 2.5 tbsp
    Pork : 1 Kg
    Curry leaves : 6 sprigs
    Coconut oil : 1 tbsp
    Water : 1/4 glass
    (For roasting)
    Onions : 2 big (sliced)
    Vinegar : 1 tbsp
    Chilli powder : 1 tbsp
    Coriander powder : 1 tbsp
    Pepper powder : 1tsp
    Turmeric powder : 1/4 tsp
    Curry leaves : 2 - 3 sprigs
    Salt : to taste
