Is there any particular reason why you didn't mention udemy at all? I've met some software engineers who only recommended udemy for new skills, and they have great spring and summer deals.

Idk how people can still recommend skillshare... even in not sponsored vids. They had a good start but now all they are offering is a bunch of bad quality, much too long (so you can have so many section bulletpointed in description) curses. It's clear that most of their $ went into PR but it doesn't feel like they even trying. Got bunch of people who forgot to cancel and I guess that's enough.

I’m a sophomore in high school, and I want to begin coding. Do you have any advice about the process? Also, which language should I begin with? I was thinking of Python.
Python is probably the best to start with so you are on the right track. The best thing to do is just start building things and if you get stuck a lot, learn to search how to solve your specific issue but not the entire issue. Freecodecamp has a 300 hour roadmap that is really good and it is free as well. If you are interested in CS i would suggest going through CS 50 (havard has their entire class for it on youtube).
I think with you being so young and already having interest in something and perusing it puts you way ahead. My advice would be to learn about what interests you and not focus on what others think what you should learn or what is in "high demand". I feel like this puts stress on people and they don't learn as quickly and effectively as they could while having FUN learning. I'm a advocate for enjoying the process of learning and following the path you enjoy because that will help a lot.

c/c++, basic cs concepts, basic knowledge of operating systems and hardware, basic knowledge of data structure and algorithms. This will give you a solid foundation, it might look a lot but i said the basics, all that content should only take you 6 months to learn. After that choose a developer path and go for it, backend, frontend, mobile etc... there are several roadmaps around that can guide you.

GA looks very welcoming and it's placements look consistent. Springboard looks good with being self-paced, but unsure about placement. Udemy is cheap, but Angela Yu's teaching seems really good.
