I had no idea something like this exists until I met the Tormek team last month at the housewares show at McCormick place in Chicago. I ordered one one as soon as I got home, because I've spent a lot of money and countless hours learning to use traditional Japanese water stones. Don't get me wrong, the old manual method is superior in many ways, but when it comes to maintaining our kitchen knives along with my wife's knife roll, this unit saves me a lot of time and effort.

Absolutely. This is not a competitor to manual stone sharpening. It is for the home chef, bbq enthusiast or even a knife enthusiast who want sharp knives quick and to maintain quick. It is far superior than stones for that application. I have numerous sharpening systems and this is on my counter full time.

I learned its a 600 grit diamond stone. Im used to 250 stones, so this takes a few more passes and patience. I dont think the Tormek owner knew how long the diamond stone would last. Wonder how much for a new stone ... Thanks for the tips on how to sharpen. Wonder why the built in hone isnt good enough and you had to strop it on the other leather. .. Good stuff! Thank you!

Honing and stropping are different. I have a video on this. The T-1 does a fantastic job for both sharpening and honing but the honing wheel is dedicated for honing.

Thank you so much for the comment, I really appreciate it. Tomorrow I am releasing a new video on how to change the guide pads when they wear and cleaning the diamond wheel. It is amazing how that wheel sharpens again not realizing it is impacted by metal dust. How long have you had the T-1?

Great video! Even though i have a Tormek T8...I bought the T1 small machine for just quick touch-ups while I'm cooking and does not take up much counter space. These are great little machines!

That's awesome, you are going to absolutely love it. Be careful you may be sharpening knives for hours ;-). I have some great video on doing cleavers and other things so hopefully those help you including one I did recently on cleaning the diamond disk and changing the pads which you won't need to do for quite a while but it's always there for reference.

Mirror sharp is also not ideal in a kitchen knife. Having a toothy edge that the 600 grit offers is perfect after removing the burr.
