    I have had a lot of questions about how I plan, execute, manage my monthly grocery haul, each month I share the process of breaking down all the bulk food, what and how I cook it all over the month and my thought process as I go. This two part series (it ended up too long for a single part!) is a really in depth chat and look at how I plan and execute and work out exactly what it is I buy each month, how I work out what needs to be processed first, and how it is going to feed my family for four to six weeks!

    Hi Nyssa, I am a new subscriber and I think you are ABSOLUTELY AMAZING,, the way you are providing for your family! The meals you cook and the variety is incredible and you and your husband Darryl are to be commended for stepping out of the norm and giving your kids an old fashioned slow living and healthy country childhood and they should be proud to have you as their Mum and Dad. Can I ask if you have a background in hospitality or chef -ing? The way you prep and cook is very organised and intentional and I am aw watching what you can do with ingredients. You are easy to listen to because you speak clearly and confidently and you are very articulate. I noticed in your intro video that I watched first up that you said that you were previously in franchises before you moved to where you are, what were your businesses if you dont mind my asking? What does Darryl do now? I will continue to catch up with your videos and will keep watching in the future to see what you are doing. Our kids are grown and left home now and its just hubby and I here, so I follow, purely from interest. Your gardening and canning videos interest me as that is something I want to get into. Do you have any canning videos that I can watch? Did you recently learn canning or was it something you already knew how to do?       I have worked in some kitchens but not in any capacity that I had much in the way of training, I did some cooking in a pub and in sports canteens that sort of thing, I think it is just that I spend a lot of time doing food prep and so I try and do things mindfully to make it work as well as possible! :D
      We used to own Mister Minit Franchises, Darryl worked for Mister Minit for a lot of years :)
      Darryl writes/creates, part of the reason we wanted to move to slow living so that he has the opportunity to pursue that creative side of things :)
      I have a couple of canning videos in my catalogue, some pork and soups and caramelised onion Jam! I do some each month in my prep videos, the bulk of what I get, but I don't always do videos of just canning, its a hard process to film it adequately in my house :D. I knew the basics of canning before we moved out but I have definitely taken more interest and pushed my skillset more the longer we have been out here and grown more of our own and started seasonal eating :)

    Nyssa, I'm glad I'm not the only one that has a pantry list that includes how many I have, like to have and need. I'm also that person that weighs meat as its prepared for storage or cooking. I allow 100g of raw meat per portion, (mince, beef and chicken) I cant afford more than that. but I don't make my own burgers ( I really should) and I buy meatballs already prepared, it works out the same price for those as mince and takes out the need for more washing up lol I'm picking up some other handy tips so thankyou. on to part 2 for me :)

      I like to portion control not only for cost, but to make sure we're not chowing down on more meat than we need and bulk up appropriately with veg hehe. I make the kids wash up ;) :D. Gotta get something out of them!

    Would love to know more about how you make the dog food? Like how you use the chicken after making stock ect :) love this video look forward too seeing more

      Once you pressure cook the stock you can basically just crumple the bones to a paste in your hands! I just mix all the veggies and bones etc with some stock to thin it out into my thermomix (any blender/food processor would work!) and mix it to a paste, its kind of like a thick soup, then we put a cup ladled over a smaller than normal portion of their dry food, they love it, and the vet said its perfect for getting extra nutrition into them etc :D. If I don't need the stock for anything, I regularly put any veggies we have surplus, sweet potatoes, zucchini, pumpkin, etc etc, it makes the stock really cloudy so I don't tend to can that stock, but just use it all for the dogs, and any extra liquid the chooks or the piggies love! :D

      So important in Spring like you are too, when you're so busy out in the garden as well! makes the stress of deciding on meals easier hehe, apparently we have to feed the kids even if we've got gardening to do! :D

    Fantastic video. I love seeing how you do it. I have a base list of what must be on the shelves, I have a list that can be flexible of what and how much to preserve to add to and the meat and veg are literally like ideas and I can substitute and mix and match. This allows me to do 2 monthly rotations in my food storage and have I have multiple rotations . I naturally like to eke things out like treats and meat . My scraps of paper on the fridge then have a running list of meats on hand (which I'm terrible at crossing off what I've used) and extremely flexible meal ideas based on what's in our seasonal veg box or garden. Before the last few years , I was stricter with menus but now I've learnt to be flexible because the things I want just aren't available at the time. Thank you so much for taking time to explain so well how you do it. 🤩🤩

      I think the more flexible I have gotten, the less money I spend, the ability to make something from whatever I can find in the cupboard or fridge allows me to eke out more meals from less stock! Learning what we can stretch out past when we'd normally have finished using it etc. It has definitely made us more mindful of the whole nose to tail approach in not only animal products but everything else as well too, using every last scrap of edible food to be turned into 'something'!

    I completely agree with meal planning, I tried it for awhile and it made my grocery bill so much higher, I think having flexibility is ultimately cheaper. Great video 🐝

    Hi Nyssa, I love bone-in chicken thighs. A really tasty easy way I sometimes cook them is to place on a sheet pan and spread fruit chutney on the top and bake. My six kiddos all loved it. xx

      We love them too, though these are the ones with two bones in them, so a little more finicky, but still well worth the price! :D and I have the bones for stock/dogs as well :D. Thankyou! :D

      @@OurSmallFootprint definitely worth it for the price. My husband used to deliver fresh chickens to retail outlets. If there was ever a return , his boss would say to just keep the tubs of chicken as it was cheaper than paying for their transport back. Gee could I debone/ segment a chook in record speed! I also had a 101 ways with it so it didn't get boring. Saved us soo much money! Looking forward to seeing what you come up with xx

    I use lentils with mince to extend it. Lentils are pure protein without the fat.

      I have used lentils before! The only issue I have with them is that unlike pearl barley they need a little more cook time at a simmer, and I have accidentally put them in later and not simmered long enough and that batch of bolognese had a bit of a gritty texture lol. I like the texture of the pearl barley, lentils tend to almost completely dissolve but the barley has a bit of chew to it still, and with the way we eat, that little bit of added fat isn't too much of a concern :D

    I was wondering if you checked the half price specials weekly and things you needed, could you order online and your Mum could pick them up in a time that’s convenient to her.. you could pick up from her on your monthly shopping trip and you would save money. Just a thought. Love your videos 😊

      I could probably organise a click and collect to her, but most of the half price stuff I find is convenience foods, which we don't buy often anyway! But yes, if there was something that was a superb deal! she would definitely let me do that :D

    Nyssa, I really enjoyed this information. I don't meal plan either. I tend to have more waste Because I put things off. Do you ever make stuffed peppers or stuffed cabbage? Just curious. You gave me a few great ideas I am going to implement into my kitchen production. Thanks my Friend for your steadfast knowledge.

      We're not huge fans of peppers/capsicums here, they repeat on me horribly! We tend to like cabbage any and every way though! But we do put a lot of it up as pickled coleslaw, it is just so nice to have that fresh crunch available at any time even if I don't have a fresh cabbage on hand!

      We just have a twin tub on the decking near our kitchen hehe! We're getting a grey water filter setup for it though using a bathtub and gravel, so when I get that done, I will be sure to include how we do our washing and what we use! :D

    Just a suggestion you may have already thought of.... as you head to your mum's on shopping day, can you shop the deals/ specials and have them delivered to you mum's place, to wait for you?
    i'm going to use the Coles 2kg buckets of peanut butter only as an example- you do a specials dry goods part shop- Coles delivers for $4 - and will deliver orders over $50.
    Just a thought that may hell you take advantage of the off weeks specials?

      I used to shop the specials and do something similar, get it to my mums or a friend would grab it for me, but I tended to find that most of the half price specials ended up being smaller and processed foods that we didn't eat anymore, but now that they have those bulk buys again etc, I might have to make the effort to check the catalogue each monday night and plan it in! :D

    If I forget something at the grocery store, I will immediately order it from Amazon. That keeps me from going back and spending unnecessarily and I'll have it in 1 or 2 days. If its meat or something cold, I try to do without. I hate going shopping so I'd rather order it online.

      Shopping is so arduous, being able to streamline it to monthly has been great, its a long way to go, but I pretty much don't leave the property any other time, it suits me! lol

      Meat patties I don't, because we do them as a very specific treat (because they take up so much mince) probably only once a shopping trip kinda thing :D. My meatballs though, yes, I use breadcrumbs (preferably sourdough ones I make myself because I love the texture) and eggs, I use dry french onion soup mix that I make up myself and I use minced onion, sometimes bacon, sometimes mushrooms, just depends what I have on hand. They're a great stretch meal! I bulk out my bolognese with pearl barley as well, that's our preferred texture :)

    What are the homeschool laws is Australia? In the USA each state sets its own rules

      Each state has their own rules here too, they vary slightly :) You report to a governing body in each state to make sure you are aligned with required curriculum :)

    Wow you are so organised and so inspiring. I have 3 young kids and I find that tiring and lacking in time. What is your secret with 6 kids? Definitely qonder women.

      It helps that I don't leave the property! I'm lucky with that, no travel time lost, and full days to work with :). I definitely think the fact that I spend 24/7 in my house with my kids except for those 3ish days every 4-6 weeks helps keep me on top of things :). But also, practice, we've been doing this monthlyish shopping gig for probably over 12 months now, it took a while to figure out :)

    Can you leave money with your mom to pick up items and hold until your trip? Just on your top items.

      I can do a click and collect etc at times if it was something that was super cheap, and have been known to do it, or ask a friend to grab me something. But I try to focus on my shop as a single trip, because it is so easy to get caught up in the constant perusal of specials etc! I'd have to make sure I kept a good record of 'extras' I got as well so I didn't blow the budget or double up too much on stuff! :D

      @@elizabethjohnston5247 When the twins were babies, the only way we could tell them apart was by their different coloured amber necklaces lol. There is a theory that amber can help with teething pain, that it is helpful for inflammation and pain relief. I don't know how true it is, but it is a lovely stone, and I'm happy to wear it as a just in case! All the kids had ones with their birth stones in them just because they liked necklaces, over time they have been broken, but some of them still have some around :D
