    I work with USDA... as long as the meat in that broth is kept at 165deg F and above... it will not harber bacteria and kill bacteria of the fresh stuff added to it... that's how it lasts 40 years... they have to keep that whole thing simmering and if it were to cool below that min temp for over 2 hours, then it would not be considered safe to it.

      They immediately put those soup into a freezer overnight and boil it back every morning

      No, they got rid of the old ones and add the new ingredients but they never changed the broth.

      ​@@Jansellopez04that's not exactly true. Of course, they sell a good amount every day and fill it up in the morning, so that it gets replaced on a regular basis. It always contains components that have been simmering for days nonetheless. That creates a more complex aroma.

    From my understanding, only the broth itself is 40 years old, not the meat. They strain the bits of meat out of it at night and put fresh ones in the next morning.
    So, no, you’re not gonna eat a 40yr old piece of meat and there’s not stuff festering at the bottom.

      @@nocturnalwolf7559 read the second half of my comment again.. functionally can you even have a 40 year old broth when you're actively using the broth? it all gets replaced in time.. I guess it just means they never clean the thing.

    Its actaully not all true, Every night they remove what's left from the day. Clean the pot while simmering the left over soup to use for the next days pot.. its simmering just not in the cooking pot. So yes it's been simmering in another pot and no it's not the cooking pot ..

      There is no old beef. They strain the broth to remove all bits of meat every night and cook new beef every day.

    There is no cover on that- a bug or mouse fell in by now, I mean, they didn't even clean up the broth spill. However, the beef is not rancid, that broth has been preserved by the heat

      If the soup cool down maybe. Bugs and insects are repelled by the heat so they wouldnt just drop dead in mid flight and fall in there. the soup has been simmering for half a century DAY AND NIGHT so you figure it out

      @@ValerioRhys the entire concept of nit changing the broth is not hygienic. A bug can fallen into that broth when no one was looking, people who don't wash their hands after using the bathroom have touched that broth, people who didn't cook the beef properly have fed it to someone, and that's just what happened in a single day let alone over a 50 year period of cooking. I know that food has gotten someone sick. Change the broth as it's a guarantee that broth has cross contamination from all the years of meat being mixed into it.

    Ive eaten here two years ago on my trip to Thailand. The soup was good but the beef wasn't, it was very chewy and definitely not good quality. I found a bone In the soup too.

      They use a special technique called Hunter Stew or something that makes it taste better the longer it cooks.

      Probably an older chunk of beef. But regarding bone though: of course there's gotta be bones in there, considering that the meat and bone (for the marrow) are stewed for the flavour.
      You have to throw out nearly all of your western idea of how a soup/ stew should be like when you're coming to a place like Thailand and Southeast Asia. They are not the same.

      Nah,if they're having a regular turn of customers, I'd doubt the meat's been in there longer than a day or 2. Analogous of home made yoghurt or vinegar. You just keep the process going. Then again, I could be completely wrong on all counts!
