I’m gonna dice the apples, lil spray butter and brown sugar, cinnamon, in foil boat on smoker for a little while then finish like you did. Great job as always guys! Oh, and maybe a splash of vanilla in that foil boat goodness!!???
Smoked pork chops are poor man's sous vide! Excellent video, and I just can't wait to try making this. And to your point regarding the brine, I always err in favor of the Morton's brining guide. Short 4-hour brine is 1/4 cup Morton's Kosher salt to 32 oz. of liquid. And I believe in adding the God particle, so I always add some MSG as well :)
If that chutney was as good as you both made it out to be, take Amy's idea of eating by itself one step further...how about wrapping it in puff pastry, and creating some apple tarts?? Served with some vanilla bean ice cream...well, you can guess the rest!
I'm curious about how you're butchering bone-in pork chops yourself. I always thought you have have a bandsaw to do any sort of decent job with stuff like that? Also... That looks fantastic. 🤤

I buy the whole roast and have the butcher cut em for me on sale, then vac seal them myself and freeze..i could have clarified that...
