It was long, long ago, but Chef John Folse from Louisiana was a long ago male counterpart of Vivian. I don't now if you have ever caught his shows of years ago...Such a cultural respect for your diverse Louisiana Cuisine. But, yes, I, too, love Vivian!

Was in Charleston recently with family and Vivian’s restaurant, Lenoir, was connected to the hotel where we were staying. We hadn’t planned on eating at a “hotel restaurant” in Charleston (which is what we assumed it was), since the city has become known for its great restaurants. But our flight got in late and it was open late and right downstairs. It was only after we went down and had ordered that we noticed it was one of Vivian’s restaurants (I’d enjoyed “A Chef’s Life” for years). From the pork rinds dipped in grits and greens, to the fried catfish with bacon fat mayo and Carolina caviar (made with black eyed peas instead of beans) it was all absolutely fantastic. We even ate there a couple nights later after being exhausted from a long day walking the streets and then driving to watch the sunset on the beach @ Isle of Palms. The roasted beets were great and the cornbread was surprisingly the best I’d ever had (and I grew up in a southern household). Out of all the great places we ate during our stay, Lenoir had some of the best food we had. Highly recommended.

Just to be clear - as if anyone native to North Carolina or the South wouldn't know from second nature - the food at Vivian Howard's Chef And The Farmer is NOT traditional Southern food. What it is, is a fusion, a hybrid between that traditional Southern food and French- or gourmet-style cuisine. Howard isn't deceptive about the character of her food, but I do think a casual observer of an interview like this one might be inclined to believe that her food is in fact traditionally Southern simply because of her manner and demeanor and because of her rural roots. But, no, what Howard serves at her restaurant, like what's made at other new-Southern-cuisine restaurants, such as Crook's Corner, in Chapel Hill, North Carolina, is something new and different from traditional Southern cooking. That's a good and fine thing, of course, but it shouldn't be confused with something it's not.

She needs to go visit an Amish or Mennonite community. We handmade all of our pasta, pies, cookies, bread cakes, jam, jelly, and more.We start cooking all day. We eat food that is wild and we grow we use the whole animal and we make homemade pet food for our cats, dogs. we grow our only food and we can our food for the colds days. She needs to see how Amish and Mennonite woman cooks.
