Thank you for providing an old man with a dream. After 52 years of guitar I changed to keyboards two years ago. I am 70 years old and accept that I will never be able to play all of this, but I love the opportunity to try, again, thank you.
Not to be "that guy" but if you take it very slowly, focus on technique and get a teacher you can absolutely play all of this. Good luck. I'm learning too.

Met this 50 year old guy playing guitar, killing it; thought he played all his life, but he had only 10 years of experience.
10 years of playing is 10 years no matter what age.
I think you will learn how to play this melody. My advice is to put te video on half the speed. The melody looks and sounds complicated but it’s actually quite easy. But remember half the speed. And go over it in a slow tempo. Don’t rush it.

how long did it take it?
I fully learned this back in march 2022. I started in january. Took me about two months without having ever touched a piano keyboard before. Its really beginner friendly. Trust me on this, just go for it.

Cam someone explain the use of C#/Db over a key of E minor please
Because it's not in E minor but in E Dorian mode, which is the natural minor scale with major sixth note, in E minor it is C# instead of ordinary C. There are 7 modes that you get from ordinary major scale. Dorian mode you get from building intervals from 2nd note of major scale. Dorian mode is very often used for solos in Jazz and in Pop music. Just type in Google Dorian mode for better explanation, because English is not my tongue and I can't express myself.

I’m struggling getting the timing right between the bass line and all the right hand parts. Anyone got any advise? Any practice tips would be much appreciated!
I'm struggling with just that too! I haven't made it but making the rhythm snaping my fingers or whatever while I play I helps me, also playing it with the solo bass line wich is here on RUclips helps you with the rhythm

For every key you hit on the left you need to hit 2 on the right, when you break it down like this step by step you’ll get there. That’s how I did it anyway.

What speed was this? Trying to do my own MiDi so I can test improv's at the end, and I occasionally need to have empty spaces for the song and MiDi to stay in sync, and if I take the audio track off, it sounds weird. Help?
