    Ingredients, 2 people: 250g Trofie pasta (or similar variant), two good handfuls of fresh basil leaves, a clove of garlic, a handful of pine nuts, salt, a little pepper, approx. 20-30g each of Parmesan and Pecorino, finely grated, the best olive oil (approx. 20-30ml, be careful, please feel the consistency if in doubt) - only use a mixer if you don't have a mortar (!!!)

    hey Boris nothing beats some homemade pesto. I can practically smell the aroma from here. I haven't made pesto in quite some time, I definitely want some after looking at this. Using the mortar and pestle really makes such a difference from a food processor!

    I love pesto and I agree that making in a mortar will give you a finer and more tasty result than doing it in a blender. Although I do confess that I have make blender pesto as well. Thank you so much for this informative recipe with a lovely dish. Looks delicious and I can taste the flavours through the computer. 😋😋

      Thanks for your comment, Debbie. A lot of Italians use the blender, quick and easy, there is no problem with that. The point is getting "more" out of the ingredients and that leads to using the mortar. Greetings, Boris.
