  • All About Coriander Seed
    We are talking here about the dried seed - not the fresh leaves.
    Two Varieties European and Indian
    European is smaller, round, and more potent -usually what we see in North America
    Indian variety is larger, oblong and has a more delicate flavour.
    Coriandrum sativum L.
    Plant Family: Apiaceae
    Origin: Unknown
    -A herbaceous hardy annual, of the parsley family
    -Coriander grows wild over a wide area of Western Asia and southern Europe, so no-one really knows where it is actually native.
    -The name derives from the ancient Greek word for bed bug… because they thought it smelled bad.
    -The dried fruits have a lemony citrus flavour when crushed.
    -Ground coriander seed loses flavour quickly in storage and is best ground fresh.
    -Whole seeds keep almost indefinitely.
    -The seeds are warm, mild and sweetish. There is a citrus undertone similar to orange peel.
    -The seeds are used in mostly savoury dishes from pickles to sausages.
    -Used in brewing, mostly Belgian whits.
    -Large-fruited types are grown mainly by tropical and subtropical countries, e.g. Morocco, India, and Australia, and contain a low volatile oil content (0.1-0.4%). They are used extensively for grinding and blending purposes in the spice trade.

    I think one important thing missing here: Coriander will be so much aromatic when you roast them first vs using it raw.

      correct, but when the Colonel did that then the Coriander will stand out in his secret spice blend

    This might sound weird, but I think roasted coriander seed tastes like a dark chocolate with orange flavouring.

    Never used coriander much, but had a relative who puts it on roast veggies, and it really improved them and made them great. But like cilantro….some like it and some don’t.

    It sure is a weird plant. I'm one of those who thinks cilantro tastes like soap, but I love coriander seeds. I use them in my chili seasoning blend.

    I don’t know why he says it’s not used in sweet dishes; it goes great with all kinds of fruit. I put it in oatmeal with brown sugar, ginger, allspice cinnamon, and a little cardamom. Good stuff.

    I love crunching on coriander seeds in my pickles or pho broth 😋 like a sweet pickled berry. Slightly soapy too and yet I like it 😜

    Well, Cilantro and Coriander are two different languages for the same thing. Cilantro is the Spanish word for coriander. It appears that in North America folks say cilantro when they want the leaf and coriander when they want the seed which seems kind of silly. I think other English speaking parts of the world would call the leaf coriander, and the seed "coriander seed." In Spanish I believe coriander seed is "semilla de cilantro."

    Just want to comment I’m seeing coriander showing up in fancy desserts recently: ice cream, short bread, and had it in a sweet crepe

      I've personally used coriander as part of the flavoring in my homemade cranberry sauce, alongside cinnamon and black pepper. That trio of spices does really well against the tart cranberries as well as a heavy dose of fresh orange and some apple juice. A dash of ground coriander is also a fun secret ingredient to sneak into oatmeal cookies when I'm swapping in chopped dried apricots for the more common raisins.

    Was wondering if one variety Indian or European is more potent than the other as a lady recommended I try it for some health problems I have. I have read to soak seeds overnight then drink the liquid. Although she said boil fresh C and put on skin
