    Noticed your adding oil to the butter for cooking, my younger bro taught me that one. Try this, put a whole lemon in the freezer, in a plastic bag, grate the frozen lemon over the cooked fish and chips. What phase of the moon were you fishing, we always find it much up to the full moon, no rubbish fish too.

    • @WekaDigitalMediaNZ
      @WekaDigitalMediaNZ  6 лет назад +1

      Might have to try that thanks. We just normally fish the tides more in different areas. I do use the moons and tides for whitebaiting though.

    Snapper heads with onions and lemon pepper and a tiny bit of oil or butter steamed in foil over the bbq is a fancy favourite, when it comes to eating the flesh though i prefe the humble Kahawai's meat when fried to just cooked and juicey.

      @petergoodwin2465 6 лет назад

      Weka Digital Media NZ . Its freezing cold in Melbourne to. Been burning up trees ive cut down to get rid off it and of course a few beers around the fire. Cut up a gas tank from the old Chrysler wagon im rebuilding because the gas really hurts the power of the old V8s and it uses twice as much gas as petrol. Makes a great fire pit . Can sit out there all night with a few beers and get rid of everything i don't want. The wife has been living on those panko schnitzel. Im doing fish the same way . Great ideas from you and unlike those cooking shows on tv you don't need some exotic ingredients no one has heard of before. I just look through your videos and find a great recipe and it always comes out better than any restaurant. Sorry to say but i think you put those fancy chefs on tv to shame and you don't need million dollar equipment and special ingredients to make this beautiful food. Great stuff mate. Have a good weekend and a few bourbons .

      2 kilos of bait can catch a lot of fish in New Zealand

    • @WekaDigitalMediaNZ

      They are $10 a kilo for pilchards, I get a 2 kilo bag lasts for ages. I cut a pillie in half to make 2 baits. But yeah they are expensive really.

    • @lennygid8452

    still not sure why Australian salmon (kahawai) taste different over in New Zealand, there literally the same fish (apart from the ones they get north they are different if i remember correctly, still the same family) ive had them both from here and new zealand and they dont taste as strong over there and yes we bleed ours aswell.

    • @WekaDigitalMediaNZ
      @WekaDigitalMediaNZ  6 лет назад

      Always wondered if there was a difference as they really don't rate them in Oz as a eating fish. Good to hear a bro's perspective on them.

    • @comeatmebro3229
      @comeatmebro3229 6 лет назад

      yeah im not sure why its the case but i have eaten them when i went over to new zealand king fishing and they weren't to bad, and i guess they are to an extent underrated here in aus but they do taste stronger, i know there is 4 fish in the family Australian Herring (by far the best to eat) Western Australian Salmon, Eastern Australian Salmon/Kahawai (hope im spelling it right) and the Giant Kahawai. Where i live here in South Australia we get the Western Australian Salmon and they get bigger then the Eastern and taste basically the same but the Eastern in New Zealand do taste better for some reason. maybe its what they eat or the water temp or something.
      i do like Smokes Australian Salmon or it as Sushimi but you have to remove the blood line and it can become a hassle and no point when you have other more tasty fish to eat. the juvenile (we call them Salmon Trout don't ask why because i dont know haha) Salmon taste really good though, not as good as the herring but still pretty good.
      also make some of the best mulloway/shark/surf snapper bait
