that chef is so cutely shy .......real experts are always so humble those who don't know make all big talks.A thumbs up to the chef and the team. please show how idli and dosa is made , their secrets for that extra sponginess and crispyness that one never gets at home.
Idli - there is a specific type of "idli rice " /boiled rice (old).(slightly yellowish in colour ) . 4/3.5 glass. Full udad dal 1/1.5 glass (dal should be a little yellowish shade ). Soak for 2/3 hrs.
grind seperately both in grinder ( avoid mixie) after 15-20 min adding water in between to ensure batter is just consistent enough. Then mix both and grind together for 2/3 min add salt. Ferment overnight or 8 hrs.
Before boiling idli - mix the fermented batter uniformly.
Add a few drops of til oil in idli plate and spread it. Then put batter and boil for 10-15 min and serve with saambhar/chutney . 👍 Enjoy !
FYI - the current version of saambhar is Chatrapati sambaji's
invention !! He gets the credit 👍
For dosai - the rice proportion is more(1:5) . Add more water
(Batter will be thinner ) .tava should be low heat (splash water) and add oil drops uniformly while making dosai.
