    餃 is dumpling, and in Chinese, the character in front of it is the adjective/qualifier. 水餃 is "water" "dumpling", meaning it is a type of dumpling to be boiled in water, as opposed to steamed dumplings (蒸餃)or pan fried dumplings (煎餃). As you might be able to tell, the characters for steam and pan fry have four dots at the bottom, this is because they are cooking methods and those dots represent fire.
    Regardless of what type they're supposed to be, you actually could cook any of them using any of the three methods, it just isnt ideal. The wrapping in particular is usually tailored for whatever the cooking method is. For example, steamed soup dumplings xiao long bao has very thin skin, and would easily puncture if you boiled or tried pan frying.

      Also interesting to note, the usual Chinese style 水餃 is prepared by boiling in water, but is served dry and usually with soy sauce rather than in a broth/soup, although such variants exist too

    I suggest getting triangle/thin cut noodles for a chewier texture! One of the main draws of Ranshu/Lanzhou ramen is the noodle cut options as they usually have a sizable variety, although I think #4 is the thickest kind that isn’t flat

    Fun fact: “Ramen”’s kanji is ”拉ra面men”。拉means stretch and 面 means noodles. As shown in the video how the chef was making the noodles by stretching the doughs

      @@Jyoo609 In simplified chinese they are both the same character, and it's not that easy to get confused because of context, so I'm sure Japanese will do fine.

      @@Medbread they did a street interview and showed various Japanese people simplified Chinese. A lot of Japanese got confused with the simplified characters and the 拉面 threw them off, they kept guessing something to do with faces.

    It’s a pretty well-made Lanzhou, with a clear savory broth, radishes, good chunky (better than slices, fight me Chinese shops!), cilantro and all. Going for thicker next time is definitely a good idea.

    I saw those noodles and literally just moaned out loud. They look so good and I miss noodles like those so much. Also suigyoza/water gyoza means gyoza boiled in water (compared to panfried, steamed, deep fried)

    Usually Lanzhou style beef noodles have thinly sliced, not cubed, beef. And they're aren't served with dumplings. But other than that it looks fairly authentic

      According to the Internet it used to be chunks in China too, but it got expensive over the years and shops went for slices. Now people are arguing over how few slices are acceptable…😢

      Eh, gyoza is JP. Since this is a Chinese dish here (Lanzhou noodle-soup), Jiaozi, or just dumplings works better.

    I guess 水餃子(suigyoza) is just dumplings because IIRC fried dumplings isn't that common in China

      or "boiled dumplings" if specification is needed.
      Pan-fried dumplings are actually common in China. Usually called "pot stickers" (鍋貼)

    I had authentic hand made noodle soup in Netherlands (nearly all customers were local asians, most ppl spoken chinese, they made noodles etc in frint of us) and what You got looks nearly as good tho I am no expert. 😂 what I had blown me away

    This is what I want to eat everytime I return to China. It is very hard to find local restaurants that sell this dish because not many chiefs were trained to have the skill to make this noodle in the US.
