I am beyond happy I found you on RUclips, I’m a Belizean from Independence Village and recently moved to Switzerland. I’m going crazy looking for recipes because everything is in German, so it is hard trying to translate words and trying to find the right ingredient. I just wanted to say thank you for making this possible for Belizeans abroad, it is truly a huge help to watch you do it and using can products as well. Continue doing what you do. I hope to visit Ghana one day and learn about my ancestors heritage

One of my grand and great grand parents came from the UK to Belize yrs ago and that's how I ended up being Belizean . I am so grateful I was born and raised there. Yes the culture is similar to Jamaicas and so is a lot of the foods. I had planned to drop my accent, but Jada forbade it as she says I should be authentic. :)
Cool, it's like Native kneel down bread, or mexican fresh corn tamales. Kneel down bread is basically young corn cut of the cob and ground into thick paste with nothing else, wrapped in young green corn husks then baked in a ground oven or steamed. Amazing how much different Native American tribes have in common as far as cuisine!

In Ghana we have something similar to this, it’s called Kenkey or Dokono! It’s amazing how Hispanic and Caribbean cultures are deeply inspired by African cultures.
Thank you for all your effort, I usually don't comment but I have watched a lot of your videos. My family trained me in Creole style cooking and I learned some chinese and italian dishes. But Belizean is my new crush. my guy is Belizean. He can't cook and no one has a recipe written down. So I had to attend cooking lessons with his aunt when she comes to Chicago (she taught me how to make panadas and tamales). So thanks very much because you have archived these traditional foods so that the kids can taste and continue these wonderful foods. Right now they are 10 & 5 and we will cook ducunu real soon.

I am Belizean American/Part Honduran and I love the recipes it reminds me of my childhood being raised belizean and my summers as a kid in Dangriga. I was thinking to make a cookbook with all our family recipes including garifuna dishes from Belize and Honduras so that I can pass it down in the family because as our kids get older and date american like my generation I know hour blood will thin out but we can at least the culture alive and intact. I been relying on the elders in my family all this time and I know they won't be here forever so I want to make a conscious effort to make this cookbook that will include family stories pictures positive affirmations and even a little lesson on garifuna and belizean kriol. I could make these on a skillet but when u stay in the dorms u automatically have to get a meal plan. So since I already bought meals, buying ingredients to make your recipes would be an additional cost. Although I have made your gachos & burritos on sundays. I have also made mole, fish soup, and tacos on sundays. Sunday night is the only time the cafe doesn't open lol. It's so nice that your mom has her family there that cares about her so much. My prayers are with her and your family :)

It came out to 8 points each (I made a total of 16), which is wonderful, I can have one as lunch. They were delicious. Hi 4MoonDancer, It's corn meal, and if you can't find kernel corn, you can use the sweet or sugar corn, but it'll taste sweeter or you can use corn on the cob and grate them.
Hi guidedog1000, it will swell because of the baking powder. I find its best if you make them off and put them in the fridge or freezer cooked or uncooked. It'll react much like pancake batter if you just set in a container and refrigerate.

Wow, thank you for your recipe and demonstration. My mom used to make these foods (panades, tamales, etc.) and I did not pay enough attention so I was really please to watch your show, The Bare Pantry Show, using modern cooking (shortcut and using newer kitchen aids) to prepare. I will make that next weekend.
This recipe is very similar to how I make it but I use less cornmeal, like two boxes of the jiffy cornmeal. I also use coconut oil instead of shortening. I don't know if it has something to do with the fact that coconut oil sleeps that makes it a good replacement for shortening - at least in this instance. I so appreciate you. At first I thought it was ducuna which is what we make in antigua, but it looks more like tamales. very cool. I'd love to try making this someday. similar steps to ducuna except instead of corn its potatoes and coconut, sugar and spices, milk, flour, baking powder, raisins, black pepper. and fold in foil, banana leaves or sea grape leaves.

This looks so delicious. I am Mexican and this is almost exactly the same as our "tamales de elote" (sweet corn tamales), minus the coconut milk! I am so excited to make this. I think it will taste better than the "tamales de elote" I've had because of the coconut milk. I love all things coconut! I will also use coconut oil in place of shortening. Hi, oh my gosh I am so glad I found your videos. I'm Belizean by birth but did most my growing up in the US. Ducunu is my Mom's favorite but she never learned how to make it. So I'll surprise her and make it for her. I'll let you know how it goes. Thanks again. Lol my family always used the cans but im going to make some tomorrow by shucking off the corn kernals and putting them in the corn husks before i wrap in foil land butter instead of lard since im vegetarian, the coconut milk definetely makes it delicious ..nice video!!

Hi BHluxury, All you need to do to make the ducunu more gelatinous is put less corn meal mix in the mixture. The coconut milk is the thing that makes it rich and the shortening makes in moist. With any of my recipes if I call for shortening, be sure to use that ingredient or you won't get the same results like mine. There are only a few recipes that calls specifically for shortening and I'll usually say if it can be replaced. You'll do great on the Tamales or Escabeche I'm sure. Good luck!!
I am Jamaican, Jamaica is not far from Belize and the food is very similar. I even find the accent somewhat similar to how middle class and educated Jamaicans speak when they are not talking raw patois. We also have Ducunu in Jamaica it's sometimes called "Blue Draws"...anyway I make Mexican styled Tamales here in the UK and use foil just as you are in this video. I find it easy just to use the foil. I used to boil the tamales but now I steam them, it works for me better that way!

Thanks for your response. Yes very similar to Jamaican it seems so. Belize has such a mixture of races and even though it may not seem so to an outsider so does Jamaica. We have Syrian, Indian, Chinese, White etc. I thought you may be Indian either native of Belize or eastern Indian. The UK has a large Indian community. I was born in Jamaica and came to the UK when I was five, I'm now 31. My dream is to live in Florida one day in the near future. I love to cook and I'm loving your videos!
Use less corn meal and you can also switch out a can or two of the Kernel corn to sugar corn to make it more moist. We usually douse it with gravy from Stewed Chicken so a little dry wasn't so bad. I'll redo this and 1/2 the recipe and make them more moist in the near future. I left Belize at 15 and even though mom still cooked Belizean foods, she didn't like us nosing in her kitchen to see her recipes. I laugh now because she was so against the show and book, but now she is my champion.

I'm not sure it this is one of those recipes like pie dough that is strict about shortening. I'll try a small dose with butter and see if it changes the consistency of the dish though and come back to let you know.

not bad for my first try but it came out a bit too dry. next time i'll use less cornmeal. i absolutely love your channel! when i was in belize, i never bothered learning to make any of this stuff bc you can buy it cheaply. but in the past year or two i've taught myself to make panades, salbutes and many other things. i've always wanted to know how to make ducunu and i love that this recipe uses canned corn and a blender. so easy! i'll be making this a lot more!

The shortening does make a difference. Also you can put less of the corn meal to cut down on it coming out dry.

Wow, thank you for your recipe and demonstration. My mom used to make these foods (panades, tamales, etc.) and I did not pay enough attention so I was really please to watch your show, The Bare Pantry Show, using modern cooking (shortcut and using newer kitchen aids) to prepare. I will make that next weekend.

This recipe is very similar to how I make it but I use less cornmeal, like two boxes of the jiffy cornmeal. I also use coconut oil instead of shortening. I don't know if it has something to do with the fact that coconut oil sleeps that makes it a good replacement for shortening - at least in this instance.

At first I thought it was ducuna which is what we make in antigua, but it looks more like tamales. very cool. I'd love to try making this someday. similar steps to ducuna except instead of corn its potatoes and coconut, sugar and spices, milk, flour, baking powder, raisins, black pepper. and fold in foil, banana leaves or sea grape leaves.

This looks so delicious. I am Mexican and this is almost exactly the same as our "tamales de elote" (sweet corn tamales), minus the coconut milk! I am so excited to make this. I think it will taste better than the "tamales de elote" I've had because of the coconut milk. I love all things coconut! I will also use coconut oil in place of shortening. Hi, oh my gosh I am so glad I found your videos. I'm Belizean by birth but did most my growing up in the US. Ducunu is my Mom's favorite but she never learned how to make it. So I'll surprise her and make it for her. I'll let you know how it goes. Thanks again. Lol my family always used the cans but im going to make some tomorrow by shucking off the corn kernals and putting them in the corn husks before i wrap in foil land butter instead of lard since im vegetarian, the coconut milk definetely makes it delicious ..nice video!!

Hi BHluxury, All you need to do to make the ducunu more gelatinous is put less corn meal mix in the mixture. The coconut milk is the thing that makes it rich and the shortening makes in moist. With any of my recipes if I call for shortening, be sure to use that ingredient or you won't get the same results like mine. There are only a few recipes that calls specifically for shortening and I'll usually say if it can be replaced. You'll do great on the Tamales or Escabeche I'm sure. Good luck!!

I am Jamaican, Jamaica is not far from Belize and the food is very similar. I even find the accent somewhat similar to how middle class and educated Jamaicans speak when they are not talking raw patois.
We also have Ducunu in Jamaica it's sometimes called "Blue Draws"...anyway I make Mexican styled Tamales here in the UK and use foil just as you are in this video. I find it easy just to use the foil. I used to boil the tamales but now I steam them, it works for me better that way!

Thanks for your response. Yes very similar to Jamaican it seems so. Belize has such a mixture of races and even though it may not seem so to an outsider so does Jamaica. We have Syrian, Indian, Chinese, White etc.
I thought you may be Indian either native of Belize or eastern Indian. The UK has a large Indian community. I was born in Jamaica and came to the UK when I was five, I'm now 31. My dream is to live in Florida one day in the near future. I love to cook and I'm loving your videos!
Antiguans makes it with sweet potato and they cook it in banana leaves.....your version looks just as good.

Use less corn meal and you can also switch out a can or two of the Kernel corn to sugar corn to make it more moist. We usually douse it with gravy from Stewed Chicken so a little dry wasn't so bad. I'll redo this and 1/2 the recipe and make them more moist in the near future. I left Belize at 15 and even though mom still cooked Belizean foods, she didn't like us nosing in her kitchen to see her recipes. I laugh now because she was so against the show and book, but now she is my champion.

I didn't get the amount of shortening either. I wrote everything else but missing the amount of shortening.
I'm not sure it this is one of those recipes like pie dough that is strict about shortening. I'll try a small dose with butter and see if it changes the consistency of the dish though and come back to let you know.

It is easy Sonya..Kinda sweet to the taste. Be sure to not put too much of the corn meal or it will be dry. It should be no thicker than oatmeal.

not bad for my first try but it came out a bit too dry. next time i'll use less cornmeal. i absolutely love your channel! when i was in belize, i never bothered learning to make any of this stuff bc you can buy it cheaply. but in the past year or two i've taught myself to make panades, salbutes and many other things. i've always wanted to know how to make ducunu and i love that this recipe uses canned corn and a blender. so easy! i'll be making this a lot more!
I don't understand the term cornmeal mix. Is that like regular cornmeal, like fine cornmeal ?????? If not what is the brand name of this mixture?
