      Dámaris L yo no creo que sea porque no quieren conocer, digo, hay de todo, pero cuanta gente tan pobre hay que precisamente por su pobreza nunca sale de su estado, ciudad o comunidad. Y bueno por otro lado Mexico es muy grande y diverso, es imposible conocerlo todo a menos que a eso te dediques y te llevaría muchísimo tiempo.

    Very cool video! I hope the indigenous peoples of Mexico get more positive attention! It´s an unspoken truth that they are not very well treated. But look at how amazing their resilience, culture, and work ethics are! Please do follow up videos with this and other groups! I´d love to do something like this as well! Saludos de Puebla, amigos!

Despite our ridiculously hypocritical attitudes towards immigration, we demand that Mexicans cook a large percentage of the food we eat, grow the ingredients we need to make that food, clean our houses, mow our lawns, wash our dishes, and look after our children. As any chef will tell you, our entire service economy-the restaurant business as we know it-in most American cities, would collapse overnight without Mexican workers. Some, of course, like to claim that Mexicans are “stealing American jobs.” But in two decades as a chef and employer, I never had ONE American kid walk in my door and apply for a dishwashing job, a porter’s position-or even a job as a prep cook. Mexicans do much of the work in this country that Americans, probably, simply won’t do.
    We love Mexican drugs. Maybe not you personally, but “we”, as a nation, certainly consume titanic amounts of them-and go to extraordinary lengths and expense to acquire them. We love Mexican music, Mexican beaches, Mexican architecture, interior design, Mexican films.
    So, why don’t we love Mexico?
    We throw up our hands and shrug at what happens and what is happening just across the border. Maybe we are embarrassed. Mexico, after all, has always been there for us, to service our darkest needs and desires. Whether it’s dress up like fools and get passed-out drunk and sunburned on spring break in Cancun, throw pesos at strippers in Tijuana, or get toasted on Mexican drugs, we are seldom on our best behavior in Mexico. They have seen many of us at our worst. They know our darkest desires.
    In the service of our appetites, we spend billions and billions of dollars each year on Mexican drugs-while at the same time spending billions and billions more trying to prevent those drugs from reaching us. The effect on our society is everywhere to be seen. Whether it’s kids nodding off and overdosing in small town Vermont, gang violence in L.A., burned out neighborhoods in Detroit-it’s there to see. What we don’t see, however, haven’t really noticed, and don’t seem to much care about, is the 80,000 dead in Mexico, just in the past few years-mostly innocent victims. Eighty thousand families who’ve been touched directly by the so-called “War On Drugs”.
    Mexico. Our brother from another mother. A country, with whom, like it or not, we are inexorably, deeply involved, in a close but often uncomfortable embrace. Look at it. It’s beautiful. It has some of the most ravishingly beautiful beaches on earth. Mountains, desert, jungle. Beautiful colonial architecture, a tragic, elegant, violent, ludicrous, heroic, lamentable, heartbreaking history. Mexican wine country rivals Tuscany for gorgeousness. Its archeological sites-the remnants of great empires, unrivaled anywhere. And as much as we think we know and love it, we have barely scratched the surface of what Mexican food really is. It is NOT melted cheese over tortilla chips. It is not simple, or easy. It is not simply “bro food” at halftime. It is in fact, old-older even than the great cuisines of Europe, and often deeply complex, refined, subtle, and sophisticated. A true mole sauce, for instance, can take DAYS to make, a balance of freshly (always fresh) ingredients painstakingly prepared by hand. It could be, should be, one of the most exciting cuisines on the planet, if we paid attention. The old school cooks of Oaxaca make some of the more difficult and nuanced sauces in gastronomy. And some of the new generation-many of whom have trained in the kitchens of America and Europe-have returned home to take Mexican food to new and thrilling heights.
    It’s a country I feel particularly attached to and grateful for. In nearly 30 years of cooking professionally, just about every time I walked into a new kitchen, it was a Mexican guy who looked after me, had my back, showed me what was what, and was there-and on the case-when the cooks like me, with backgrounds like mine, ran away to go skiing or surfing or simply flaked. I have been fortunate to track where some of those cooks come from, to go back home with them. To small towns populated mostly by women-where in the evening, families gather at the town’s phone kiosk, waiting for calls from their husbands, sons and brothers who have left to work in our kitchens in the cities of the North. I have been fortunate enough to see where that affinity for cooking comes from, to experience moms and grandmothers preparing many delicious things, with pride and real love, passing that food made by hand from their hands to mine.
    In years of making television in Mexico, it’s one of the places we, as a crew, are happiest when the day’s work is over. We’ll gather around a street stall and order soft tacos with fresh, bright, delicious salsas, drink cold Mexican beer, sip smoky mezcals, and listen with moist eyes to sentimental songs from street musicians. We will look around and remark, for the hundredth time, what an extraordinary place this is.
    The received wisdom is that Mexico will never change. That is hopelessly corrupt, from top to bottom. That it is useless to resist-to care, to hope for a happier future. But there are heroes out there who refuse to go along. On this episode of “Parts Unknown,” we meet a few of them. People who are standing up against overwhelming odds, demanding accountability, demanding change-at great, even horrifying personal cost."

      @@Tony-nj9de Ignorance is bliss. Hispanic is anyone who originates from a Spanish speaking country. Latino refers to those who are from LATIN America therefore they are not a race. There is a European Latino country and the only Europeans that are Hispanic are Spaniards

      Píldora roja , primero yo no despreció el idioma español, Segundo si te refieres a ellos numero uno ellos tienen que escojer entre trabajar para sobrevivir o estudiar un idioma que es extraño para ellos te lo dijo por experiencia propia yo desde temprana edad tube que trabajar para sobrevivir llegando de la escuela tenía que ir al campo asta tardes horas así que no tenía tiempo de acer tarea ya que llegaba casi de noche a casa así todos los días y puedo entender completamente a esta jente. No se tu situación es posible que seas una persona estudiada y no puedas entender lo que es trabajar de sol a sol

      No inventes cosas. En México las tres raíces raciales o étnicas son obviamente la indígena, la europea (principalmente ibérica) y en menor medida la subsahariana, pero aparte de eso los inmigrantes del este y sudeste asiático y de Oriente Medio han aportado a la genética de la población mexicana, por lo que no puedes reducir el mestizaje a solo lo autoctóno y lo europeo.
      Y al hablar así en contra de la inmigración a México sólo asemejas a los supremacistas nazis a los que seguro has de despreciar.
      Si algo que aportó en demasía a la cultura del país fue el aceptar refugiados españoles que huían de Franco durante el gobierno de Cardenas, por poner un ejemplo.

      Kinetic Kennons my grandma used to make some of the best mole. It's my favorite dish. I had me some for fathers day. I only get it 3 times a yr. Fathers. Birthday and new yrs. Awesome video. Ain't nothing like mole arroz y pollo with burnt tortillas.( not really burnt. But almost. Lol)

    I’ve never been more proud of being a Patron of you guys.💕
    It really is sad that the new generations don’t learn their language. I’m descendant of African slaves, Nahuas (related to mexicas/aztec), Spanish and French; I don’t even know what language speaked my African forefathers, my Nahua great grandfathers stopped teaching nahuatl to their children to reduce discrimination against them for not speaking spanish. I have plans for returning to University to become a polyglot and a philologist to preserve dying languages of Mexico. You said that food is culture, so does language, and it’s paramount to preserve both.

    Great video! Perfect example how a lot of people live in the outskirts/rural type environments. Those tortillas are the best! The mais is fresh for that perfect tortilla texture and flavor.

    Nicely done guys!!! I'm sure you next tortilla will be better Goyo. La Wera did an incredible job with that super cute doll. My favorite dish is a pre-Hispanic one that is known as PIPIAN. It's a different mole that is made out of pumpkin seeds or peanuts, both variations are fantastic!!! Hope you give it a try guys.

    I bought several mini dolls like those at San Miguel Allende. Wish I would have bought more. They had strings attached to them and I use them on my Christmas tree every year.

    Wow.... Thats real food... I remember to sit at my grandma's table close to the fogon eating hand made fresh food just like that... It was not expensive, but it tasted super good... I miss that so much....I cried watching the video. I was forgetting to thank you for making me cry lol. Loved the video. God bless you two.

    Hi guys !! I’m originally from the state of Puebla , and all I have to say is thank you !! Thanks for taking interest time and effort to lear about my country’s culture. It makes me really proud to know that there’s people who see us Mexicans differently .regardless of what some people in the US think and say it’s good to know that you seeing for yourself that we are not all bad guys lol !.     La Sierra Gorda de Querétaro is a must, next time you guys are there visit Puente de Dios, Cascada El Chuveje, Sotano del Barro. There's a highway called Puerta del Cielo and it literally looks like the entrance to heaven. The Maria dolls are originally from Querétaro, love my beautiful state. Ay mi Querétaro lindo, te llevo en el corazón!

    This is your best video by far. Best idea ever! Best content not only in your channel, but about Mexico. One of my interests in Mexico is to learn about the indigenous Much respect to them and to you both. My abuelita used to make salsa with a molcajete (min 2:13), we use to drink using jarritos (what Guera is drinking from) and she also use to sew clothes for the only doll that I had when I was little. This video is full of culture, love, tradition, history, harmony, sense of community, family, and nostalgia. My abuelita also had chickens in the back patio that she loved but used to feed her family. This video makes me want to cry. Its an invitation to appreciate everything more and more. Its sad that we are so immerse in work, video games, material stuff and the rat race that we oversee so much beauty in life. Thank you Goyo and Guera for being so genuine and humble and sharing your life experiences. One thing that I would have like is a conversation with one of them. I would have loved to hear their language. I hope you do more videos like this one, it's really the best kind. I hope your channel continues to grow, more and more people need to find you.     Guys... you´re great! I'm speechless. With this video you show us some important things: 1st, You´re very Respectfull persons. The way you're interacting with the pepole speaks very well about you and your families... I'm sure, you come from very well educated families which show you the respect for the others... That´s great! 2nd. You're helping very much to México. Of course not everything is good, but there are a lotof more good people than "bad-hombres", so all this things that you share with the world are helping this country, and we thank you that very much. 3rd.     This video made me so happy. As soon as I saw “Querétaro” I instantly clicked on it ! And as the video was starting I was hoping you guys would say you were in Santiago de Querétaro because that’s were all my family is from!!!!! And it made me so happy seeing the indigenous ladies making the dolls and wearing the traditional suit. My grandma my moms mom used to wear it!. And I can say proudly that all my ancestors were otomi!. This video also made me miss my trip to Santiago de Querétaro barrio 4o And waking up to my aunt making tortillas en las mañas para acompañarnos con las carnitas que comíamos!!!     What an awesome day! This is the coolest thing you've done. The doll was so cute, as was the little girl making the tortilla, and Hill giving her a hug. Don't feel bad, Greg. I still haven't been successful making a tortilla. I have one of those same presses, but they've never come out right. I don't have time these days to work on it. Would love to spend a day like this.

    You had me laughing non stop when your tortilla folded on the Comal. In a good way tho, it's nice to see people from other countries experiencing our culture. The same thing happened to me when I made my first tortilla.

    A great trip would be to take the train between Los Mochis to Chihuahua passing through the Copper Canyon (larger than the Grand Canyon) and home to the Rarámuri (the men with winged feet...the men who run far), more commonly known as the Tarahumara.
