A diabetic DOCTOR'S wet dream ! 'Basic ingredients' are a good starting point . . . Like most recipes , I have an instinctual habit of tailoring it to fit my own taste ! I would show a bit more LOVE to the coconut , ( make it TOASTIER , it can be a pain to get 'PERFECTLY GOLDEN BROWN , but it's DOABLE ! ) 2 cans of sweetened condensed milk is really far to sweet , ( in this old guy's opinion ) maybe double the evaporated milk , add a bit of cream & butter . . . FAT WORKS where 'sugar' BECOMES FAT ! Not that I'm any PURIST- I would opt to use unbleached sugar , and use a bit of ghee in the syrup - * which would go MILES toward preventing STICKING ! Even though you use heavy cream & a bit of butter AFTER caramelizing the sugar . . . I would add the butter / ghee to the pan FIRST . . . it would tend to speed up the process , ( oil holds HEAT much better than water does ) . Thanks for posting this recipe , it gives me a great starting point ! ** 'Think I'd also add some toasted coconut to the FLAN MIXTURE before mixing & baking ! The coconut flavor would INFUSE the entire mix ! ! ! 'Gotta LOVE IT !
