    I used Indonesian ragi tempe to prepare amazake drink. Tastes about the same.

      Wooo! Sounds delicious!!! I eat tempe sometimes but don't know "ragi" means. So happy to know you made the Amazake!!!

      @@YUCasJapaneseCooking ragi is like koji rice. There are 2 types of ragi, ragi contains protease and ragi contains amylase enzyme.

    How many days can it be stored in the fridge?

      Ideally, if homemade, it should be consumed within a week. If frozen in small portions, it can be stored for up to two months. Frozen enzymes are temporarily asleep, but when thawed, the enzymes will return to work. I hope this helps! ❤️

    Hello Angel you are so preciously beautiful :) i do not have a rice cooker ......do u know how to make this the tempurture i need to cook in a crock pot or in the oven or stove top? i need a temp of 60 C which is 140 F what temp do i need to make it into porriage?

      Hello Teresa, Thank you so much for your warm message!!! I am sorry to find your question and reply you too late!
      To make porridge, please soak rice for an hour. Then, please start making porridge with medium high heat. Once it boiled, please turn low heat and simmer for 20-30 minutes. Oh, I also recommend to make amazake with using a vacuum bottle/thermos. :)
