Beautiful and inspiring work. You can wash and cut the vegetables a day before main batch cooking and refrigerate them.it will save you time on the main day. It can be a separate video on how you prepare your vegetables before cooking in readiness for batch cooking.
There is a shop on the corner of moi avenue just opposite koja stage that sells those baking foil tins in wholesale. Can't remember the name but it has a green door
Mrembo, your content is just amazing. It takes time, creativity and roho safi to invite us into your house, learn and critic. Cooked vegetables are best steamed. Even when adding to e.g. stews, leave them to last 5 mins, turn the heat off and mix. Coz the stew is hot, they will cook yet remain e.g. peas, hoho green. Coz after freezing, then reheating to eat, they cook more loosing all the nutrients. Roast vegetables are best eaten as cooked. Again coz they are crunchy and sweet as opposed to reheated after collecting freezing waters hence soggy.
I like watching you batch cook. I tried once but it took me long but was greatful for the prepared meals after 🖒. A tip for the okra - wash them and pat dry before cutting up, no slime. But you didn't show what dish you made with it. I love okra we cook it mixed with rice in one pot delish, also it's added with taro leaves (we have another name for it) and coconut milk yum - its call callaloo, yum. Blessings from 🇹🇹
Well done once again. With the tray bake vegetables it's best to put our African potatoes in the oven first and spread them thinly on the tray followed by carrots, then sweet papers ie the red and yellow ones that ripen from those green peppers if they're available and courgettes. On the day you're warming them to eat it tastes delicious with chopped tomatoes that will cook in the tray as you warm the tray bake. This is my experience with tray bakes. Thanks for all the tips shown here.
sasa Suzy. I love your personality! the chicken skin is the best especially when baking/roasting chicken. That's where the natural fats and taste comes from! The oven crisps the skin abit so it won't be as gross as when stewed. also the natural fat is healthier and you use less processed oil.
