    Kitchen tip for handling chilis!
    Sprinkle your hands with granulated white sugar and wash with dish soap. The sugar will help scrub the capsaicin oil off and the dish soap should help lift the oil off too. Win win!

      haha i use dish soap too. But only because I don't keep hand soap by the kitchen sink. Not sure about using an exfoliant at the same time though. Sounds risky ;-)

    I like the way you speak! It's so refreshing to hear someone who doesn't speak in constant rising intonation (declarative statements said as if everything is a question). Nice demonstration for this dish, I use a bit of potato starch on the tofu before frying.

    I live across the street from a restaurant that I order this from. Thank you so much for this recipe. It's different than what I get here - they don't fry the tofu as much and they don't use five spice powder, but I have some so I'm trying it. The restaurant serves this on a bed of sliced cabbage with a side of rice. Tasty. Thanks for another great episode.

    I made this today and it was delicious!! But I air fried the tofu first because it's less work and then you can just toss it in with the aromatics. I had it with rice and steamed string beans and it was a very satisfying meal! Recommended!

    Hi Mary, my #reciperequest would be Chinese Black Bean Sauce (usually with beef and beef broth) and Broccoli. I can never get that deep wonderful flavour right, when leaving out the beef. I love this dish and it would be great if you could veganise it for us. You have a great channel and i love it. I am so happy to have found you. Thanks for sharing :-)

    I have to admit this one sounded boring at first, but you convinced me with this shot alone at 4:37 of the aromatics sautéing. Those slightly charred green onions look so good.

    yum! :) . You have inspired me to cook more and more vegan foods. Also since my freezer stopped working for a few hours (power outage) , my meat kind of thawed which means i can't use it :( lol. I made 'tuna' out of chickpeas and the kids loved it!

    I absolutely love this recipe although I have changed it up! I have my tofu with mixed bell peppers, chilli, onion and garlic. I season with salt, sugar, black pepper and mixed herbs :) I then serve with rice.

    My local Chinese restaurant makes the best salt and pepper tofu and I’ve always wanted to learn how to make it! Your tofu came out so perfectly crispy- mine never comes out like that! I will have to try again with this recipe 😍😍😍

    Mary you did it again. Great recipe. I didn’t have red chilies so I used some Siracha in the stir-fry. And no 5-spice so I just looked up the ingredients and improvised with what I had on hand (4 out of five spices did the trick). I’ve never fried tofu before and I should have fried it a bit more. Live and learn. But the flavor was perfect. Now, on to that Honey Butter Chicken...

    this is such a coincidence because i recently caught up on your videos and the first thing i thought when i saw your ginger beef was that it looked like it would taste good as a pork stand in for salt and pepper pork! i think i'll give that version and the tofu one a try each, for science of course

    Amazing recipe, in my regular rotation. So quick, simple, and delicious. I air fry my tofu to cut back on the oil a bit -- crunchy outside, chewy inside. Superyum!

    This looks great! Do you think it'd work in the fridge + reheated? I have a feeling it'd lose all its crispiness, but I'm okay with that - I just like taking dinner into work for lunch the next day.

      Yes, I think so. I've eaten them cold out of the fridge and they still taste good. You're right about the crispness though.

    There's a local shop that's down the block from my home that makes fresh tofu! It tastes (and the texture!) is completely different from pre-packaged tofu (still good though!!); this is a great recipe for me to try because I need some tofu variety! Haha.

    Do vegan peachy porkchops. My step-dad used to make it all the time. I'm not sure if it's a thing; it might have just been a family concoction. Basically it was salsa mixed with peach/apricot preserves semi-caramelized onto porkchops/chicken & sauted onions/peppers served with rice. Could be interesting. #reciperequest

    I wish I could find a good looking tofu block like that. I live in the middle of nowhere and can only get the cheap stuff unless I drive forever. Great video though. You always make me hungry and jealous lol

    Hey Mary, gotta ask if you have any suggestions for no-oil cooking? I've been trying to cut back on refined oils and wondering if there are any methods I don't know. Would love to see you experiment with some stuff and come back with results. Regardless - keep up the good work!

      Water saute? Dry-fry? All you need is a really good nonstick pan. But I prefer to use a light spritz of oil even then because it's just a few extra calories and makes a world of difference with flavour. Especially when you're waking up the flavours in garlic, chilies, etc. There are oil-soluable flavours.

      Yeah I've been wondering if I should still use mainly water with my non-stick but is a tiny splash of oil ok or not. Right now I'm just using water and adding a bit every time it all evaporates. Works out ok. Maybe I'll consider a splash of oil for aromatics before main ingredients go in.

      oh PS For this recipe in particular, just go with no oil for the tofu. If your nonstick pan is good, the tofu will release from the pan when it's fully browned with just a little push from your spatula.

      Mary's Test Kitchen // Vegan Cooking I have tried it as an omelette. It was alright, but felt more like a pancake than having that fluffy bouncy mouth feel of eggs. I need to work on my technique for sure. How about vegan cottage cheese without tofu? Think it’s possible? I miss those curds!

    now I LOVE tofu but due to some research I did recently i have learnt that they now feed
    soya primarly to
    livestock for the meat Industry it may be just as bad as clearing land the rase the beef itself what are your views on the Ethics of soya?

      Clearing land to grow soybeans for cattle feed has nothing to do with soy grown for human consumption.

      I just thought after reading this The expansion of soybean plantations into forests is also contributing to climate change. Deforestation is responsible for about 15% of all the global greenhouse gas emissions caused by people. Conversion of forests to soy plantations in the Amazon particularly threatens the climate.

    How to keep my soy milk for along time?

      depends on if it is store-bought or homemade. Homemade soy milk must be consumed in a few days. You can freeze it for longer storage (up to two months). Store-bought soy milk is pastuerized so it lasts longer. Use it according to the label instructions.

      I guess if you want to be exact :-) I find it helps to get rid of the seeds since they are also hot (perhaps coated from contact with the pith). That reduces the total spicy effect if you know what I mean :-)
