So, the 10/Port gives you 5¾ Production, the 8/Port gives you 7½ Production, and the 10/3 ore gives you 5. I also consider what new numbers the settlement gets me onto- subtracting 2/36 chance of a nothing roll is pretty slim, particularly as we may prefer the 3 brick to the 3 ore later on anyway. The 10/Port also improves the most as the game progresses, and is on a limited time. The 8/Port is a trap as a build-around, as it's a solo-blocking magnet non-pareil. Not only do they block your heavily invested 5 Production spot, they also shut down your Port entirely to do so! The 10/3 is interesting, though. On a board with only 7 ore, how important is it to have access to every ore roll? Whomever takes the 10/3 undisputibly gets the most Ore Production, but is having "The Most Ore" a more important thing than the flexibility of the 3:1 port?
Looking at it a bit more, the reason to take the 10/3 is less about what it does for us, and more of a manipulation of Red. Now that Red has secured The Most Ore, they may want to take the Ore Port- which blocks us from the 8/3 brick spot we're considering. They'd then want to expand onto the 8 sheep if we haven't gotten the sheep Port yet. By taking the 10/3, we make them look south first. They'd take the wood Port and the 3:1 wheat and then go looking for the 8 sheep- a much harder road for them to run, that likely buys us the 8/3 spot. Is that Worth losing the 3:1 Port to Black? Maybe.
I still think it would’ve been great to take that 10/3, but it’s just so hard to tell sometimes in these kind of situations, because I feel like my 3:1 helped me out quite a bit here as well, I do think in the end that the 10/3 was better mostly to block red out of it because they did become pretty scary building all those cities, but as you mention their sheep there was the downfall of red 😎

there was another point that you could have plowed red to the 6 2. Probably a good thing you didnt though because he probably would have targeted you sooner. at the 21:00 minute mark
Around 17 mins in you asked if you should've gone for 10-3 or the 10 tree 3 for one port. You definitely shouldn't have traded to red and gave him 10-3 and might have dominated if you cut him off. We will never know.

Now that I've finished the episode, I can confidently say that Red lost to a dearth of Sheep, so them taking the 10/3 wasn't a big deal.
