CONGO TOFU// West African-inspired Peanut Stew // VEGAN + GLUTEN-FREE

  • If you’ve never tried Congo Tofu, you are in for a real treat! This West African-inspired dish is super delicious and will convert any tofu skeptic into a convert!
    This Congo Tofu recipe is a veganized version of Poulet Moambe (Moambe Chicken), the national dish of the Democratic Republic of Congo. I am not of African descent and I am no expert in African cuisine. This is just my version of what I think is a delicious dish, with all due respect to the culture it originated from. I know you’ll love it too!
    I'll have the recipe up on the blog soon, but for now, here are the ingredients and instructions:
    1 14-15 oz. package extra firm tofu
    1 med/large yellow or white onion, finely minced
    3-5 cloves minced or crushed garlic
    1-2 inch piece of fresh ginger, finely minced, or 2 tsps ginger powder
    5-6 mushrooms, sliced
    1 jar marinara suace OR 1 can crushed tomatoes + 1/4 cup tomato paste + italian seasoning OR combination of marinara and crushed tomatoes
    1 can of chickpeas rinsed, drained, and divided in half
    1/2 cup smooth peanut butter
    1/2 cup water
    2-3 Tbsps vegetable oil (peanut oil will enhance the peanut flavor)
    1/2 tsp ground turmeric
    1/2 tsp smoked paprika
    Salt and pepper to taste
    1-2 Tbsps (or more) sriracha sauce
    Chopped peanuts and fresh cilantro to top off
    Press and cube the tofu. Fry in some oil or in the air fryer until golden brown.
    Sautee the onion in a little vegetable oil until translucent.
    Add the minced garlic, ginger, mushrooms and a little salt and pepper. cook until the mushrooms are soft.
    Add the marinara and/or crushed tomatoes and tomato paste, turmeric, paprika, and sriracha. Let simmer for about 10 minutes.
    In a food processor, combine the peanut butter with half the chickpeas and process until it forms a paste.
    Add the paste to the sauce and stir until it is fully incorporated. Add water if needed.
    Simmer for 5-10 more minutes.
    Add the rest of the chickpeas and tofu. Simmer a few more minutes and serve.
    Serve with rice or flatbread and a side of fresh greens, if desired.
    Top with chopped peanuts, cilantro, and some more sriracha if you like it spicy!

    This was a great recipe. It refreshing to see West African inspired dishes! I like that you said this was an inspired dish. A lot of people can learn from you! For example some people will make tacos and call it Mexican food. Smh 🤦🏾‍♀️ I also see other influences in this dish such as Italian with the spices. Yes you should definitely try fufu. I want to learn how to make it too!

      Thanks so much! I’m an anthropologist so I really try to be respectful of all cultures. Lol, I’m Mexican and even the “Mexican “ food I cook is not completely authentic because I didn’t grow up in a Mexican household! It’s just fun to cook with the ingredients they would use and put my own spin on it and be inspired by the flavors of those countries. Thanks for watching!🤗

    This looks like Great recipe Jones! I will definitely be giving it a try! I just cooked up some chickpeas too so perfect timing! This would be really good with the naan I just made too. But that other bread dish with plantain sounds great too! 🤗🌱🍄🌈💛
