I was first introduced to these amazing little savory treats the first time I ever visited Finland (and thus far only time but I will be back) and I found a recipe that I've used for 7 or 8 years but I've always struggled with the crust part- my circles were never consistent and the dough too sticky, and I never could get the crimping on the edge right- and the rice porridge center was too loose for my liking and I often filled them too thick but seeing the trick with the drinking glass for the dough circles and a couple of other things you two did just in putting them together and it's like a lightbulb went off in my brain! Thank you so much for sharing all the cooking videos but especially this one.

Look very delicious! Much better than a regular/average karelian pie from the supermarket. I think the difference is the amount of rye flour (much more in these). Need to give these a go some time.

I always enjoy making traditional Finish foods that you make for us since I live in the southwest part of the United States it's pretty hard to find any authentic Finish shops or restaurants around me
I always make these at Christmas but the rest of the year I'm lazy and buys them at some Finnish store or Lidl (they have them all year here in Sweden). The egg butter is so good but I always think recipes have the proportions so wrong. Like one egg to lots and lots of butter. I want mostly eggs and just enough butter to bind it all together. The pirogis with carrots also great :)

My wife is Chinese and she makes Dumplings for breakfast similar to what you are doing. She puts pork,chicken,sausage,shrimp and cabbage,garlic,onions cilantro in these dumplings and she steams them.

My favorite pirogue of all time. My grandma used to make these for all her kids and their families. Now that she's gone, we have to pick up the torch. I make about 60 of these for every christmas and give 2 bags to my sister and her family. I can recommend a pasta machine if making alot. Or, like you did, invite a friend 😅 I have to try adding an egg in the porridge. Never thought of that and it feels like there's just something missing! edit: Also, Sari, it's havssalt not havresalt 🙃
Very nice video about making the Finnnish delicacy. Some notes, however: - It is perfectly alright to use a tad lower oven temperature. Most electric stoves do not reach 350 degrees Celcius (662 degrees Fahrenheit). 275 degrees Celcius (527 F) is still alright but the baking time must be longer. The baking time depends on filling and the crust. 10 minutes, maybe, follow Your feelings. - The traditional Finnish pie crust has no wheat in it. The crust is made from very fine rye flour, water and ... nothing else. Adding small amount of oil makes handling of the dough easier. For some reason rye dough is VERY sticky. It is still used as binding agent on certain traditional paints for painting houses because of this properrty. Also, it is a good idea to make the dough beforehand and let it rest in the freeze overnight. Also, the flour used to aid in rolling the crusts was traditionally rye only. For some reason the coarse rye flour works better with this rye-glue. The technique is to roll the crust inside the flour, so make a pile of four, put the to-be-crust disk on top of it and top everything with flour. Then roll the crust. - The reason for the horrific oven temperature is the thin crust. If the baking time becomes too long the pie will just dry out. When using the lower baking temperature, the pie actually dries out quite a lot and therefore this must be compensated by something. Again, the traditional way of doing this was not to paint the pies with a brush. Instead, there was a kettle with water, milk and butter (1 part milk, 1 part water, 0.3 parts butter) brough to near boiling. Right after baking the pies were simply babtized into that kettle. Ater that they were let to "dry" on a cloth. - The VERY old traditional filling was not rice porridge. Originally these were filled with barley porridge. The barley was not flour but just crushed seeds. Much like rice porridge but made from barley. IMHO this is even tastier that the rice variant. Another filling was made from cowberries resulting on a different product called "Röttönen". When I was on an assignment in Germany I made these for my collagues with the barley filling. It was quite easy to find the needed incredients in the local market. I would have served these with salted salmon but that was unavailable in Frankfurt at that time ...

If you have a pasta roller you can roll the dough very thin. I use the roller when making large amounts as it's also much faster.
