Crust dough
3 dl water
2 spoons oil
2 teaspoon salt
6 dl rye flour
2 dl wheat flour
(first, we did just half of this, but it was too little!)
Filling
2 ½ dl water
2 dl rice
7 ½ dl milk
1 teaspoon salt
1 egg
butter and water
boiled eggs and butter for egg butter.
Preparation of filling:
2. Stir the rice in boiling water and cook for 10 minutes.
3. Add the milk and let the porridge simmer for 30 minutes, stirring along the bottom. Leave the filling to simmer on the lid for less than 10 minutes.
4. Season the finished porridge with salt and let it cool down.
5. Stir the egg into the cooled porridge.
Making pies:
1. Mix cold water, oil, salt, and flour with a wooden fork. Knead the dough smooth and firm.
2. Sprinkle the rye and wheat flour mixture on the table and pour the dough over the flour. Roll the dough into a plate about 1/2 cm thick.
3. Press the cakes from the plate with a drinking glass.
4. Place the cakes in stacks of six to prevent them from drying out. Cover the stacks with a plastic bag or bowl.
5. Roll the dumplings with a rolling pin into a thin round or oval shells. Put the crusts on top of each other and sprinkle with rye flour in between. Cover the stack of crusts with a plastic bag. Fill the crusts as soon as possible so that they do not stick together.
6. Take the crusts to the baking table, spread a spoonful of the filling in the middle of the crust (1 cm thick layer of filling), and leave a space of about 1 cm at the edges of the crust.
7. Turn the opposite edges over the filling and wrinkle the pies with your index fingers.
8. Transfer the pies to a baking sheet on baking paper.
9. Bake the pies at 275-300 ° C for about 15 minutes.
10. Grease the pies with melted butter mixed with a drop of water.
11. Stack the hot pies in a bowl on top of each other and cover with baking paper and cloth.
Eat with egg butter!

I absolutely love when finns speak english with finnish accent. There's something very comforting about the way they speak it.
Accent sounds like a mixture of German , Italian and Dutch accents all in one.

I like Anni's accent, but I especially like the sound of Anni's actual voice. To me she sounds very clever and sharp, but not pushy or bossy.
She also somehow manages to sound brave and adventuous while also soft-spoken and even a little shy all at the same time. It's very unusual.
I really like the way Anni speaks - there's more to it than just her accent.
There are regional accents in the US that are greatly effected by the Finns such as the upper peninsula of Michigan.

i have seen a lot of Finnish people, youth and heard them speaking... This by far is the Most Suomilainen thing i have seen in a really long time! the only thing that was missing was beer and a free Perkele :D

I was first introduced to these amazing little savory treats the first time I ever visited Finland (and thus far only time but I will be back) and I found a recipe that I've used for 7 or 8 years but I've always struggled with the crust part- my circles were never consistent and the dough too sticky, and I never could get the crimping on the edge right- and the rice porridge center was too loose for my liking and I often filled them too thick but seeing the trick with the drinking glass for the dough circles and a couple of other things you two did just in putting them together and it's like a lightbulb went off in my brain! Thank you so much for sharing all the cooking videos but especially this one.

My favorite pirogue of all time. My grandma used to make these for all her kids and their families. Now that she's gone, we have to pick up the torch. I make about 60 of these for every christmas and give 2 bags to my sister and her family. I can recommend a pasta machine if making alot. Or, like you did, invite a friend 😅 I have to try adding an egg in the porridge. Never thought of that and it feels like there's just something missing! edit: Also, Sari, it's havssalt not havresalt 🙃

I bought Karelian Pies in Lidl last week here in Sweden. Most bland thing ever :) But I'm guessing it's one of those things that tastes totally different homemade than some processed cheap product :)
Made ours here in Adelaide last week. We eat them with salmon,egbutter and caviar. Just like heaven.

Look very delicious! Much better than a regular/average karelian pie from the supermarket. I think the difference is the amount of rye flour (much more in these). Need to give these a go some time.

I always make these at Christmas but the rest of the year I'm lazy and buys them at some Finnish store or Lidl (they have them all year here in Sweden). The egg butter is so good but I always think recipes have the proportions so wrong. Like one egg to lots and lots of butter. I want mostly eggs and just enough butter to bind it all together. The pirogis with carrots also great :)

Were Karelian pies a food of necessity way back when? What I found out was the pie was first created sometime around 1686! Such a fun video!

Well done, folks! Loved the video (1st time on your channel). PS: Tell Lauri that his "oven shovel" is called an oven peel (pizza peel, bakers peel). I'm surprised that you guys weren't washing those Karelian pies with Lakka or Salmiakki Koskenkorva. My Finnish friends in Dubai couldn't eat without drinking strong liquour, whilst sitting in a 'sowwwwwna' (even though it was 43degC!).

I always enjoy making traditional Finish foods that you make for us since I live in the southwest part of the United States it's pretty hard to find any authentic Finish shops or restaurants around me

Very nice video about making the Finnnish delicacy. Some notes, however:
- It is perfectly alright to use a tad lower oven temperature. Most electric stoves do not reach 350 degrees Celcius (662 degrees Fahrenheit). 275 degrees Celcius (527 F) is still alright but the baking time must be longer. The baking time depends on filling and the crust. 10 minutes, maybe, follow Your feelings.
- The traditional Finnish pie crust has no wheat in it. The crust is made from very fine rye flour, water and ... nothing else. Adding small amount of oil makes handling of the dough easier. For some reason rye dough is VERY sticky. It is still used as binding agent on certain traditional paints for painting houses because of this properrty. Also, it is a good idea to make the dough beforehand and let it rest in the freeze overnight. Also, the flour used to aid in rolling the crusts was traditionally rye only. For some reason the coarse rye flour works better with this rye-glue. The technique is to roll the crust inside the flour, so make a pile of four, put the to-be-crust disk on top of it and top everything with flour. Then roll the crust.
- The reason for the horrific oven temperature is the thin crust. If the baking time becomes too long the pie will just dry out. When using the lower baking temperature, the pie actually dries out quite a lot and therefore this must be compensated by something. Again, the traditional way of doing this was not to paint the pies with a brush. Instead, there was a kettle with water, milk and butter (1 part milk, 1 part water, 0.3 parts butter) brough to near boiling. Right after baking the pies were simply babtized into that kettle. Ater that they were let to "dry" on a cloth.
- The VERY old traditional filling was not rice porridge. Originally these were filled with barley porridge. The barley was not flour but just crushed seeds. Much like rice porridge but made from barley. IMHO this is even tastier that the rice variant. Another filling was made from cowberries resulting on a different product called "Röttönen".
When I was on an assignment in Germany I made these for my collagues with the barley filling. It was quite easy to find the needed incredients in the local market. I would have served these with salted salmon but that was unavailable in Frankfurt at that time ...

I've heard Karelian before about a region in Russia - is this the same word? I'm a fan from Canada. The term rice porridge is foreign to me. Rice pudding might be the North American term. Porridge is a word applied almost exclusively to oats + water. Happy independence day and merry christmas to you and lauri.

Thanks for the video. Where can someone get information on the wood fired oven? I've seen the bigger version i.e. "Russian Stove", but they are massive. I've daydreamed about moving to Finland. Both maternal and fraternal grandparents emigrated to the U.S. in the early 1900s. Wish I would have paid more attention when they and my parents "tried" to teach us Finnish. Missed opportunity! As the old saying goes "Too soon old, Too late smart".

My wife is Chinese and she makes Dumplings for breakfast similar to what you are doing.
She puts pork,chicken,sausage,shrimp and cabbage,garlic,onions cilantro in these dumplings and she steams them.
I love Karjalanpiirakka with Finnish mustard and Emmental cheese. Preferably Auran sinappi. :)

Anni, this is the first video I've seen of yours... not the various "press channels." (which I do love) ... and I loved it! I have to ask - how tall are you and your husband? This is the first time I've really seen either of you next to something I can compare - a stove and kitchen counters. You're tall enough your stove hood vent blocks your view! I'm a giant of Scandinavian decent and wish they made kitchens taller!
I like cooking channels, so youtube suggested me this video. At first I was watching the girls and thinking that I know the voices, but after something about half of the video I reminded that the voice of the guy is the one of the hydraulic presses and it all make a view at the hole picture :)
