Yup it was originally created by the nuns of a convent in puebla to commemorate Mexico's independence which was completed with the signing of the Cordoba treaties where Spain recognized Mexico's independence and the commander of the Mexican insurrectionist army, Agustín de Iturbide, was crowned emperor of Mexico. Yup, Mexico was originally an empire, not a democracy. He was eventually overthrown not too long after and the first Mexican Republic was founded. Though there is still an heir to throne of the Mexican Empire. The colors of the Mexican flag come from the colors of the Mexican insurrectionist flag which had the three colours diagonally instead of horizontally with three gold stars and no eagle. The three colours symbolized Union as one country, Religion (Catholicism), and Freedom from Spanish rule (French actually, since Spain was occupied by Napoleon's army and ruled by his brother at the time).

It does, but in the video they’re missing an important element: In the tradicional recipe for true chiles en nogada, the pepper must be battered and fried before pouring the nogada on it (here in Puebla they are always served battered and fried). In the first part of this video, however, where they show the process of making chiles en nogada, we see the nogada being poured on the poblano pepper WITHOUT having battered and fried the pepper first. That is considered a sacrilege by traditionalists. Greg and Hillary should have gone to Puebla to see their friends, the Perms, and tried Chiles en Nogada there. You’ll never get the real chiles en nogada anywhere else in Mexico such as Vallarta or CDMX.

Hillary hardly knew what a chile en nogada is and restaurants don’t usually tell customers that the chile will be battered and fried, so I doubt she specifically asked not to have it battered and fried. That restaurant simply destroyed the original recipe like most outside Puebla do. Also, Hillary has said in other videos that neither she nor greg really count calories, and only stay slender despite all they eat because they exercise a lot.

I´m glad looking at you traveling almost all the country, trying mexican food, so you have shared to us a lot of experiences along these years in México. One of the most funny moment made me laugh when you were at the beach. Then some mexican guys close to you showed their "culture" shouting, drinking beers with loud noise music. I had chiles en nogada for the first time the other day, and I loved it! For some reason, I didn't think I would like the dish, but I'm on a mission to try all of the Mexican classics before tending to the twenty or so pounds I've gained since moving to CDMX. The flavors were subtle and complex - I loved the way the poblano chile got hotter as I made my way up towards the stem and seeds - and the textures were incredible. The crunchiness of the pomegranate seeds atop the silkiness of the creamy walnut sauce mixed together with the sweet and savory picadillo stuffed chile was perfect. Sadly, I returned to the states the day after I finally ordered the dish and I won't be back in Mexico City until after the chiles en nogada season ends, which is apparently earlier than in PV. Lucky you!
This is my favourite Mexican dish but they serve it warm and I like it hot. The restaurant I get it every year knows I'm weird. I've also never seen walnuts added on top too. That looks yummy.

They are one of my favorite Mexican dishes. There are several restaurants around Puerto Vallarta that serve them all year. Adobes at Calle Francisco I. Madero 259 has a good one and even has a shrimp version. Red Cabbage at Rivera del Río 204A is also known for theirs. I believe that they were even served at Diego and Fridas wedding.
Veganism isn't weird at all. I say that as a keto guy who would do carnivore if I could plan it. Veganism is popular and can be delicious and healthy. I just would miss meat too much so couldn't do it long term.

If my memory serves me right (doesn’t happen often 🤣), it was a nun or group of nuns who invented the dish. The story goes, a high-ranking official was to visit their town (I believe in Puebla?) and the nuns wanted to impress with a dish that would represent Mexico. Thus, the red (pomegranate), white (sauce) and green (Chile) representing the colors of the Mexican flag!

Que bien que degusten los chiles en nogada...
A mí, particularmente me gusta que el chile sea "capeado" (con harina, huevo y luego al aceite). Me parece que potencia los sabores del chile, relleno y nogada. Sin embargo, así como lo probaste Hillary, es la forma como originalmente fue presentado por las monjas poblanas, para halagar a Agustín de Iturbide.
