- Gambas al Ajillo (Spanish Garlic Shrimp) Recipe
Inspired by Kenji Alt's recipe from SeriousEats.com:

1 Lb shell-on shrimp (21-25 per pound)
4 large garlic cloves
3/4 tsp diamond crystal kosher salt (or to taste)
1/4 tsp sugar
1/2 cup olive oil
pinch of red chili flakes
squeeze of lemon
chopped parsley for garnish
A cook who harvests the aroma and taste from the prawn shells has my respect!!! None of the other spanish chilli prawn videos do this.

I made these shrimp this way last night, using your method and they were delicious! I have made these before but not with the garlic used three ways, and from now on I will do it that way. The best!

I would take the time to devein the shrimp. There's a super easy way to do it so it takes no time at all. Like you, I'm not scared of a little shrimp poop, but if you get shrimp that have been rooting around in the sand it will quickly change your opinion.
I think you should also mention the importance of serving these with toast to soak up all the oil and sauce.
Lastly, understand there are several varieties of shrimp. Here, she's using white shrimps which are nice and tender and hold their shape well. Pink shrimp are the same. Black tiger shrimp, which usually come from southeast asia get hard and can curl up tightly.

The Prawns and Shrimps and Olives Paella fabulous
Great channel. One thing I would like to point out is that the vein is the digestive track and can give you diarrhoea or can be extremely allergic to some.
what about dishes that require whole, head on, shell on shrimp? that's not common in the US but is very common in other countries. Obviously if you are allergic to the vein in the shrimp, that's not a good idea, but most people can eat it without any problems.
Our local caught shrimp scoop up sand with algae to feed, and much of the intestine is filled with fine grains of sand if they were recently feeding. I use my thumbnail to pinch it and pull it out from the body without cutting the meat. But sometime, if it looks relatively empty, just leave it in and cook it!
@@helenrennie #realcomment Hi Helen! Love your video and this channel! FYI If anyone wants to remove the digestive track from head-on shrimp for any reason, it can be hooked out by using a toothpick. This can be done even with the shell on since the shell is in segments. It's commonly done in Chinese and Japanese cooking since shrimp tends to be served whole with heads and shell on.

hell'o ! and thank you! i eat this about every two months for breakfast as the wife sleeps and doesn't like the smell so i air out the kitchen for her. anyway i was watching again just to be watching, that it dawned on me that i never had it with the garlic tomatoe rub on bread toast you mentioned so i had to look up someones eles recipe for that as i didn't know how you make it.... soooo it made me want to ask you maybe you can show us your top five one slice of bread Appetizers or what goes good and easy with one slice of topped bread. i know this one now and Bruschetta and discovering tapas now ect which look like fun so whats your top easy five....?? love your show david
I think anything can go on bread, but my top favorites are mushroom puree called duxelles, caramelized onions and tomatoes confit, garlic shrimp, and romesco. I have videos for all of these, so just search on youtube.

We are most "rustics". In Spain is more popular for this dish the smaller ones and we use a clay pot and all ingredient in (garlic, to much garlic jaja Spain loves garlic in all dishes, prawns, gindilla or chillie and olive oil) That's for what i said 'high cuisine'
