I add 2 shots of top shelf tequila in mine as well as a half cup of orange juice. Really makes a difference and really tenderize the meat. No more than 5 hours with all the citrus or it will start cooking the meat.
Ok, the butcher clearly labeled that wrong, and it's actually a hanger steak. However, skirt steak is so easily recognizable, that YOU should have caught it when you first picked it up. That said, you did NOT pay extra for it, you paid LESS. Hanger steaks are hard to find, you actually got a bonus with that cut.
In our area, flank and skirt steak come pre packaged in a cryo vac bag that they then put into their own package so unfortunately most of the time you can't tell whats in there and what it looks like. I do agree tho, in hindsight it does appear to be hanger steak which is something I have never seen before personally. Nobody carries it locally. I also don't claim to be a butcher . FYI cutting the beef at an angle like they do @13:20 makes for a chewier bite and is more for presenting on a plate. For tacos/burritos cut the beef against the grain so that your teeth break up the beef faster. Sure cutting it against the grain is not a presentable cut, but why would that matter when you can't see it.
So Is the griddle ON while your making the tacos in the rack? Like melting the cheese and cooking the tortilla a little? Or is it after the grille is off kind of stand?
Your first guess is right, the griddle is on warming everything up. The tacos actually stay fairly warm as well if they don't all get eaten right away. Thanks for commenting! -N

American-style tacos often have crispy shells, and a wider variety of toppings, although often lesser quality - for example ground beef instead of chopped
An “authentic” street taco is usually corn tortillas with grilled beef, barbacoa, chicken, or pork carnitas. Topped with fresh chopped white onion and cilantro and sprinkled with some Mexican cotija or other white crumbly cheese(or crema) and a squeeze of lime. Shredded cabbage or lettuce can be added if that’s your thing.
A simple, cheap and pretty much perfect marinade for skirt steak tacos is Goya Mojo Criollo. You can find it at market basket. Pour it into a bag with your steak and let it marinade for a few hours.
A little worried about Jeff in this video. While he was preparing the meat, he seemed to be panting more than my German shepherds in the Texas heat. You okay brother?

That mystery steak is a hanger steak, also known as a butcher steak! There is only 1 per cow and it got the nickname because the butcher used to always keep it for himself. Ideally you’d cut out the tough middle tendon before you cook it and the meat comes out as tender as a filet! Lucky that you can get them in your area, I’ve never been able to find one!

That is definitely not skirtsteak. That type of cut, has the muscle fibers visually visible running horizontal across the short side of the steak. Another visual is way thinner cut, usually 1/2” or less

That looks like a chuck roast. Makes great hamburgers but not tacos. Grind that roast up, add in some brisket fat an enjoy an amazing burger. Your tacos are more fajita style than carne asada. Looks good. Enjoy!

Ok, I just made these for my family and friends while doing this crazy social distance thing around a bonfire in my back yard. I watched this video and prepped everything first and then staged everything I needed around my Blackstone which was staged near the bonfire....I have to say, everyone was amazed at how great these tacos were and my system of feeding them. A huge bonfire, friends, family, beers, and your tacos...Thank you for the tips fellas, from the Seattle area.

Definitely going to be trying this. I have tried every single recipe! One tip I do have is when making the pizza lay foil over the top on a metal Pan it helps with melting the cheese! LOVE THIS CHANNEL!!!
