I don't have a video for that, but for now, you could create everything in the dashboard together -all the products, all the collections-and then sort out the accessibility (the navigation) in the navigation menu. You could have the home page as a parent page that leads to both brands, with each brand having its own link in the navigation menu. You could indeed use a page to create a separate homepage for each brand, and within each homepage, link to all the collections and products that you've set up internally altogether. Hope this helps!
