1:32 The pannier setup on Aya's bike looks very high. Maybe it was needed to give enough heel clearance. But if the weight could be moved closer to the wheel axle, then the bike should be more stable.
Those racks look awful and make a good case for soft bikepacking bags, particularly on rough terrain like Dartmoor. They didn't stop you having a great time though. Not saying you can't get decent racks but they'll cost you a bit. I use old Blackburn racks and everyone speaks highly of Tubus.
As a local to Dartmoor I wish that You Tubers would make it clear that you CANNOT camp anywhere on the moor. There are designated wild camping areas which are shown on the National Park authority website. As always leave no trace and definitely no fires.
