Thank you for this recipe. Until now, I only knew honey, which is made from dandelion flowers and a ton of sugar. This variant is certainly much healthier.
I think I'll try this when it's cooler, and I also might try starting it overnight in a crock pot to see if I can't lessen the close-minding time. (Patience in the kitchen is not one of my virtues, which explains why I've never made caramel or custard!) But it really looks gorgeous, even though I use honey in cooking. So big thanks, as usual, my dear.

I totally understand, Dan; however, before you let go of the idea know that l am working on another recipe for apple honey that will yield a bigger quantity of honey. I have a few ideas so stay tuned🤭
