The Easiest Way To Make Delicious Bread

  • This is straight up a baking video, the best bread recipe I have come across for maximum flavour with minimum effort. I thought it could be helpful in the coming weeks and months at home. The full recipe is below!
    I didn't want to do a video about the virus because I think it has been really well covered elsewhere. I hope you and your family are all hunkered down and doing well. Wishing you all the best, and I'll be back to my normal science videos next week.
    ---- Ingredients ----
    - 3 cups (400g) of unbleached all purpose flour
    (or 2 cups all purpose flour and 1 cup wholewheat flour)
    - 1/4 teaspoon instant yeast
    - 1 1/2 teaspoons of table salt
    - 1 cup (240 ml) water
    - 1 tablespoon of white vinegar
    - 1/2 cup (120ml) mild lager
    ---- Instructions ----
    - Mix dry ingredients, then add everything else and fold together. Let sit for 8 to 18 hours at room temp in sealed bowl.
    - Knead dough 15 times, pull edges into middle to form a ball and flip seam side down.
    - Line same bowl with oiled parchment paper, put dough on it and lid on for 2 hours.
    - About 30 mins before baking, heat up a Dutch oven in oven to 500F (260C). Lightly flour top of bread and with sharp knife make two slits in the top.
    - Carefully transfer dough to pot and reduce oven to 425F (220C) and bake covered for 30mins, then remove lid and bake for a few more minutes (5-10mins) until brown.

    If you don't have a dutch oven here are some alternative methods. Basically, steam around your dough makes a nice crust, so any way of doing that is good. www.lifeasastrawberry.com/crusty-bread-without-dutch-oven/

      What if I don't have any flour? My region has been out for weeks. Managed to get some wheat flour (not all purpose). I hate this apocalypse.

      The standard ratio, here in the US, is 3 cups flour (+/- that for kneading)
      to
      1 cup liquid
      Adding the 1/2 cup of beer requires a reduction of the water by 50%. You must have kneaded in a large quantity of bench flour to resolve the sticky, so to speak.

    I think it's amazing that so many scientists are also bakers at home. I've been following you for a long time, and baking much longer, I assume a lot of your audience is going to be in the same boat. Well done again.
    Pro tip: With oven off, turn the oven light on, it will heat the inside of your oven to a perfect temperature for proofing, great & easy spot to let your dough proof.

    I've been making no knead bread for many years. This was a very good video. You mentioned a few things that are rarely shared, like kneading for a couple minutes before forming the loaf. That is important. Also, put the loaf in a travel pouch to place in the hot iron. I use no stick foil, but your choice is just as good. I just mixed up dough for tomorrow. I really hope folks give this a try. Cheers.

    Thanks for that great recipe, Dominic. The best part was using a Dutch oven to minimize the moisture loss (and thereby make a crispier crust). I've seen other ways to incorporate water to make a crispy crust but not your suggestion. Thanks again!

    I follow a recipe similar to this from America’s Test Kitchen! :)
    Edit: This is the exact same recipe from America’s Test Kitchen. It is actually very good I’ve made it so many times. I don’t have a dutch oven so I use pie tins filled with water placed at the bottom of the oven and then take them out for the last 30 or so min. of baking, and I place the sling-dough system into a preheated baking dish.

    Way off with the liquid to flour ratio. I tried this recipe and its ,more like 600 grams of flour

      I had the same issue... I've made it 4-5 times. I just keep adding flour until it looks like his. 600g might be right... I've never measured it.

    Holy cow, I'm from Egypt, and "bread" here is REALLY different from this. To me, this is the bread I see in like old medieval series and movies, which I always wondered about how is it like. I'm going to try making this to try and surprise my wife (in a good way, hopefully). One issue tho, I don't have a "Dutch oven". this is totally foreign to me. I do have a normal stainless steel pot, several of them, like the bowl you used to let the dough sit for a day. Can I replace the Dutch oven with a stainless steel pot?

    You always give practical advice as to how to see 'tricky bits' in a 'let's see what we can see' manner, thank you! It seems you're in the States- any chance you could do a bit of mapping out of the history of CoViD-19 (till a point in time--say April 1-- but unfortunately this is not a joke) and then talk about it with Trevor Noah's Daily Social Distancing Show-- a piece of genius of him to self quarantine to model suitable behaviours before others in the States. I'm in Helsinki, far away from my brother in the Jersey/NYC neighbourhood, and feeling a bit of stress about the news from NYC.

    I have a method that is a lot easier.
    One can light beer. Self rising flour.
    Pour beer into bowl, add flour and knead until you end up with a good bread dough.
    Place in a lightly greased bread pan and set, covered with a towel in any dark, preferably slightly warm, spot for 1hr.
    Bake at 350 until top is golden Brown.
    Time: 1hr 50min.

      Turns out I can. I made this bread maybe 5 times now. A quarter cube of active yeast, 12.5 grams works well. I normally double the recipe and take half a cube. Thank you so much for this recepie, it's awesome!

      His first step is to "mix all dry ingredients". That includes the dry yeast.

    My mother taught me that everything in the world was"just" math. Everything. Without math (in all its variations) nothing exists. Baking bread is just another math application and belongs as much on this page as quantum mechanics.

    So basically 360mL of water... When I make no-knead sourdough bread with any more than 220 mL to 400g of flour it turns into a runny mess when trying to wrap/fold it the day after. Doesn´t rise as all the gas escapes. 220 mL is less than most recipes Iˋve seen. I wonder if our Norwegian flour is just very different from other flour around the world, and doesn’t absorb as much moisture... 🤔

      Out of experience, the flour differs by price and the additives they put on it. I'm from Egypt tho, but my wife was making a no-knead pizza, bought her a kilo of all-purpose flour for the equivalent of like $0.7, it was exactly what you're describing, a runny mess. Then, I managed to somehow go out later and bought the finest flour I found which was for an equivalent of $0.85/Kilo. The difference is absolutely mind-boggling. Her ingredients included around 350 ml of water to 500g of flour tho, but she usually plays around with the recipes herself, so not sure if that's the exact numbers. Hope this helps.

      @@t6hp Thanks! Here in Norway we basically have 1 standard brand of flour, and a few exclusive ones that not many stores sell. I Saw another video where the guy was kneading the dough more. I tried that myself and the result was a lot less runny. I'll try going this route and also maybe try some other types of flour once we are free to roam around more :D

    I might suggest brushing the top of the bread with egg whites for the last uncovered 5-10 minutes of cooking.

    This is not the easiest way to make bread.
    Mix self rising flour with light beer until it is the right consistency of bread dough. Greece your bread pan, put your dough loaf inside, put a cloth over it, let it sit half an hour, then bake at 375 until golden Brown.
    From beginning to end, takes about 70 minutes.
    Of course you can add other things if you like, or go as elaborate as you like. It's all up to the baker.
    Just remember the most important thing about cooking, baking, barbecuing, etc., Have Lots of Fun (maybe even catch a buzz)!

      The beer itself is a replacement for a sourdough starter. If you get a sourdough starter you don't need to use beer.

    240ml Water +120ml Beer = 360ml Liquid. 400g AP Flour that means 90% Hydration!! And there is no way your dough looks that dry with 90% hydration. Something is definitely NOT right!
