I don't get any of the technical programming stuff. But i just love seeing the Progress you make and finding out about the struggles you Face. It makes me understand how hard it really is to create your own Game
The flat shaded look for more complex objects is incredibly simple. Make a texture, inside the texture you have a ton of small colored squares for all the colors and color variations you expect to need, then when UVing take all the faces that you want to be, say, yellow, scale them down and move them to a yellow square. And the texture won't have to be large at all. If you want a demonstration, you can watch Imphenzia's modeling challenge videos.
UI looks amazing! though I personally wouldn't use AI for images, I recommend using Figma (free online tool for making very sensible and organized .svg images with virtually unlimited resolution)

Yeah it was a just placeholder tbh. I don't intend on actually using it :P. Nonetheless it's pretty impressive what it's capable of :D
The logo looks rad as hell, there's really no shame in using midjourney for it
You should be able to export multiple animtion on mixamo if you put it all in a folder
Do you use a UI library for your custom engine? If so, which library?
it's custom as well, because I'm a masochist
do you use opengl or vulkan because the light is just so cool
