Frenchman here: We usually make the croque monsieur (pronounced croque meussieu, you're not far off Josh :D) with toast bread as it's much easier. My mum's recipe is with grated emmental and cream on the top and then stick it in the oven and it works just great. You didn't mention the croque madame with the sunny side up egg on top and that's just the best (add a drop of vinegar on the egg for fanciness). Love your content!

The way me and my friend likes to make a grilled cheese sandwhich is with provolone cheese, and white American cheese, (not the same as normal american!) On sour dough, Cook it the same withe butter grilling like in this video, and it is TO DIE FOR,.
While good with the classic tomato soup/bisque, and you'd never think it , but having a side of raspberry preserves/jelly to dip your sandwich is compliment the cheese so well, you'd never think it would be good, it probably sounds weird, but NO that jam with the provolone+white american grilled Cheese sandwhich is SO great. if anyone sees this comment, try it! you will not regret it!

    That’s an American croque-monsieur…
The basic croque in France is ham/cheese inside the toast slices and voila.
The mornay topping is for restaurants.
So your American grilled ham and cheese was actually close to what a basic French croque should be.
Ham slices and emmental/gruyère slices (or grated). Butter outside. That’s it.

Been trying all sorts of versions ever since; with tomato and basil inside, grilled pineapple and bbq sauce, spicy ground beef, fried mushrooms and herbs, Italian deli meats, pulled pork.
And for my guilty pleasure quick-fix; 2 layers of cheese with ham and ketchup in the middle, nuked in a microwave and served with a dollop of mayo. Disgustingly good hangover cure.

traditionnal french croque-monsieur is made with bechamel sauce, but actually any non pro cook will make them without it, i think your american grilled cheese is much closer to the basic croque monsieur than your other version despite the fact it looks really great

    • @Aspett0

Josh is right, traditional croque-monsieur is made with Mornay sauce, which is basically béchamel with cheese, and I swear I don't know anyone who makes them otherwise here (France), pro cook or not. To me, three things differentiate a grilled cheese from a croque-monsieur : ham (obviously), Mornay or cheese-topped béchamel sauce if you're lazy, and being cooked in an oven. I feel like grilled cheese is a snack and croque-monsieur is a dish, if that makes sense.

For a french, you just did 2 croque monsieur. The left one, the one you'd make at home, as a basically slightly fancier ham and cheese sandwich (because hey, you toasted it, worth the points for fancyness), the other one would be more "restaurant style", since no self-respecting restaurant would serve you the basic grilled cheese-like croque monsieur.

In Brazil we have Queijo Quente e Misto Quente (something like "Hot Cheese" and "Hot Mixed").
Traditionally we had the Cheese Sandwich and the Ham Sandwich (Sanduíche de Queijo e Sanduíche de Presunto)... When someone wanted a grilled one they just asked for a hot one... Someone somewhere just asked to mix both, so the Mixed one has born (Misto)... When another someone asked to grill it become the Misto Quente. The most popular one in the current days.
Where I live it's made with Queijo Prato (a Brazilian cheese that I'm sure isn't a thing outside Brazil), across the country you can found it with other cheese variations like Mozzarella, Curd Cheese or some kind of Minas' Cheese.
The only certain it's that all these variations are better than American Cheese.
