  • Kalburabastı dessert is a sherbet dessert and is one of the most popular desserts. Kalburabastı takes its name from the shaping of the dough on a griddle or colander. It is also known as date dessert in the Sivas region. It is not only delicious but also very easy to make. It can be made plain as well as with walnuts. Kalburabastı dessert has become an indispensable part of holiday tables, especially in the Sivas region. How to make Kalburabastı dessert? What should be the consistency of the dough?     Ingredients for Date Dough:
    250 grams of butter or margarine oil
    3.5 cups of flour
    1 egg
    1/2 tea glass of oil
    2 tablespoons of yoghurt
    1 teaspoon baking soda or baking powder
    1/4 lemon
    1.5 cups of walnuts
    Sherbet Ingredients:
    2 cups of sugar
    3 glasses of water
    1 teaspoon lemon juice
    Preparation of Kalburabast:
    Melt the margarine or butter and leave it in the refrigerator for about 20 minutes.
    Put the oil into the bowl where you will make the dough, add the egg, yoghurt and oil and mix. Add baking soda and squeeze a few drops of lemon on it. Then add the flour little by little and start kneading.
    Knead until it reaches earlobe consistency. Check the consistency of the dough and add flour if necessary.
    -Stop kneading when the dough reaches the consistency. Let the dough rest in the refrigerator for about 10 minutes.
    Take average walnut-sized pieces from the dough. Roll it in your hands for a few seconds.
    Place the rolled dough on the griddle or date apparatus and press it lightly to open it into an oval shape.
    Put at least 1 teaspoon of walnuts, which you cut into small pieces, in the middle of the rolled out dough.
    Combine the dough by folding both ends.
    Place the kalburabastı you made on the baking tray, spaced apart, with the folded part facing the bottom.
    Bake in a preheated oven at 170 degrees for 25-30 minutes until they are lightly browned. Take it out of the oven and pour the cold sherbet while it is hot.
    Making the Sherbet
    Put granulated sugar and water in a pot and boil it. 5 minutes after the syrup starts to boil, add lemon juice, turn off the heat and let it cool. Enjoy your meal.
    Notes:
    Kalburabast must be cooked in the oven at 170 degrees for 25-30 minutes, checking to ensure that there is no dough left inside and that it has a slightly crispy consistency.
    If you do not have a griddle or date apparatus, you can also make griddles on the large porous surface of the grater.
