  • For as long as I can remember I have wanted to make a kitchen knife, but finding time has just been really hard, until now! This is the 3rd version of this knife and overall I'm quite happy with it! I am working on minor details at this point, and I will soon be looking to make many more of these!

      Haha, well if it's worth doing it's worth overdoing Steven! It was part-time school for a bit over a year, but it was a lot of fun! I met some great people and made a lot of very tasty food! Plus I found if I made friends with the chefs teaching us then I got a lot of free food! Came home with 9 lamb shanks one night, that was a good week! 😁

      I am glad you look forward to my videos so much! Hopefully I will have new videos coming every month or so going forward, I have just been really swamped and stressed the last couple of years... Finally digging myself out of that hole and getting back to a more reasonable place!

    I love to see custom kitchen knives on youtube. Most custom knife makers on youtube seem to be oriented more towards camping and hunting knives, so it's nice to see something different. Not to mention that nobody uses knives more frequently than commercial chefs and butchers. I can also tell that you know what you're doing with designing a kitchen knife. A lot of kitchen knives made by people who don't have much experience using knives in a kitchen end up being pretty clunky and unwieldy looking.

      Really glad you like the knife mate! It's going to be really fun to go through the final steps to get it out into the world, still quite a lot of work to do! And yeah I really like my knives to get used, so professional chefs will make me happy in that regard!

      @@GoughCustom Ive been watching since the Arctic mission Knife (I think it was) and ever since I wanted to try out to make a knife myself... Ive never done it cause I just don't know where to start... Especially without having the essential Tools and a proper place to do all that stuff... But I always knew, that if I would ever make one, Id watch your videos again thoroughly since they show everything so extremely well! And additionally, they are made so well! The majority of your videos I watched without skipping a second! :D

      I came across some hand made knives years ago that I wanted but thought they were overpriced. I decided to try my hand at making knives (which is why I started following this channel and a few others) and learned a ton.
      It was really fun and I encourage you to try it. Some lessons I learned were:
      You are learning on a steep curve so each knife you make will get way better
      All of those tools are not necessary but they are worth while if you fall in love with knife making
      Order steel from a reputable supplier (i accidentally made my first knife from mild steel which wouldn't harden because I didn't know what kind of metal to buy)
      And lastly, it would have been far cheaper to have bought the "overpriced" knife.

    Phil Wilson cryos his blades right after hardening. He said he’s never cracked one this way and it saves time for large numbers of production. You’re a legend gough, I made my first legit knife because of you.

      Cheers bud! Yeah for this steel the cryo after quench is a bit too extreme, the steel ends up too brittle, but for other steels that is definitely the go-to!

    Adding an s-grind was a game changer for my kitchen knives. Would highly recommend looking into that!

    It's great to see you back on RUclips, and I'm really happy to see you're focusing on Prototype vs Production processes, and only bringing products to market that you can produce extremely well at your own scale.
    Others are taking mortgages on Kern Mills for the sake of microns, and you're getting on with real work on personally refurbished commodity hardware. It's inspirational, and I hope you see that.
    Jolly good work Mr Gough! I can't wait to see the terrifying custom fly-cutter you design 18 months from now to cut your perfect flats on these knives! Big love.

      Haha I get that reference! ;) I think everyone has different things that 'float their boat', for me personally I couldn't stomach taking on the financial burden that would come along with a machine investment of that scale, it would stress me out too much.... But that's not to say I wouldn't love the shiny toy and it's capabilities!
      I am actually slowly working on an idea for a CNC machine that I would build fully in-house that would dramatically increase my capabilities while also being much more compact than my current machines... We'll see how that goes! I'm also working on a project to investigate retrofitting my current machines with much more capable controllers that would let me get much better surface finishes... I've been able to get good results out of them but I definitely have to jump through some hoops to get there! Would be nice to get results more easily!

    Aaron, I love it, you are like a method actor studying for a movie but just to make a perfect kitchen knife. The lengths you go to to get the knowledge and feedback to make something the right way is incredible and super smart.     Glad to see a new vid! Thanks! If I may share a tip from experience in production re: clamping the blank on the drill press. Clamps are slow. Drill a 1/4" hole in your DP table. Bend a 3" piece of 1/4" round rod so 2" of it is 180 degrees back touching itself. This will be an "anti-helicoptering pin" Way faster then messing with a clamp and so easy you'll actually use it. Pace is high, time is money, so safety must be simple and easy. :)

      @@GoughCustom It's just a nice easy way to do it. I've got a few holes radiating out from center, so I can move the pin out for bigger pieces. If you really want to up the holding factor, make the rod longer, bend the piece into the shape of a mini blacksmith's hold down and give it a tap to clamp the work piece down so it can't lift when retracting the bit. :)

      You definitely will! You don't have to soak them for long, just a couple of minutes, but it really helps stop the stones from loading up...

    Hi, excellent video , I´m using poshing stones and they are amazing. A good finish to the blade is compact grain belts. I go from 180 to 600 and it´s look much better than scotch belts.

      Thanks Joe! Yeah I really like the 'stealth' style handle as well, the original rounded handle was so dull in comparison. It's also been very comfortable to use so far which is something I was initially worried about!

      Thanks mate! I have used the super glue technique a couple of times now and it works really well! It helps keep the blade cool too which is great. I found it's pretty easy to break the bond with a blow from a hammer so make sure you use plenty of glue, because it's not fun if it comes loose during grinding!

    What a treat Aaron! Made my day. Chef School...You the Man! The idea of a 'Do it All' kitchen knife is sorely needed. Spent a lot over the years on my eclectic taste in cutlery but in every case the handle shape is one of the primary things I feel for. Your handle and blade shape has peaked my interest and signed up. Although I didn't think I would need any other knives the idea of an all around is most appealing to my need to find the ultimate. ~¿@ My go to chef's is an 8" Myabi (Morimoto) because the handle fits my big mits perfectly as well as my Mrs...steel is Good too. Second (a gift from my son) is a Dragon Fire, although the handle isn't perfect, the thin Cryo blade with 16° grind is perfect for vegies and other soft foods. Third best is my Kikuichi 270mm Yanagi (Sushi only)...balance and handle are a real pleasure and a treasured personally hand engraved (by Kikuichi Master engraver) 60th BD gift from Mrs PJ.     It's really good to see this video arrive on this channel. Gough Custom is one of the main reasons I wanted to start making blades when I was a teenager.       Really glad you like your knife mate! I actually have a bar of stainless powder-metallurgy damascus from Damasteel here that is waiting to be made into a pair of Resolutes. I cut it down to the right size the other day and will hopefully do at least some initial machining on it before the end of the year!

      @@lucashipkins It's definitely a possibility! Just depends how long it takes to get the new CNC process dialled in! Making kitchen knives with CNC is complicated as they're so long and thin that it's hard to hang onto them while doing the machining...

    Fantastic to see you release a video again Aaron. And I see you take your research very seriously. I have found that, on large chef knives a double convex grind works the best. Also if you leave the surface of the knife with a high grit belt finish, that also helps, I use a surface conditioning belt, to get my final finish. Great to see you again.🍻

    Hey Aaron, just wanted to say thanks, I made one of those knife filing jigs using your instructional video as a basis. It's really helped me a lot. I can't fit a decent sized belt grinder where I'm currently working from, and I didn't want to use a 1x30, the file jig is helping me make good plunge grinds.

    Man, as usual you bring a whole new level of precision and consideration into even the smallest factors of your work. That's fantastic.
    If you ever consider making a variation on this, I think a Kiritsuke tip would be excellent. If you liked the look of an angular handle, a K-tip may look even better to you!

    Hello and thank you for showing these great building process. I am a german knifemaker and very interessted in the mold polishing stones to reduce the satin finish time. Which Stones do you use exaxtly? Best regards, David

      Hey David! The stones I use are the CS-M stones from MoldShopTools.com, tell them I sent you! I use the 1/4x1/2" size ones in a variety of grits and find they cut very quickly... If you're switching over from sandpaper it's worth noting that you can start at a higher grit and space out your grits more when using mold stones... So if your normal progression with sandpaper is 120, 220, 400, 600, 1000 then when using mold stones you can likely go to just using 320, 600, 1000... They will save you a lot of time! And they're cheaper overall than sandpaper too I've found! Each stone lasts me for about 15-20 knives...

    I've made a Japanese style petty and a more traditional 8inch chefs knife. Both turned out good but the 8 incher did warp slightly in the heat treat. I hand file all my knives so cant heat treat first. Want to make a large bowie next. Great video. 👍🏻👍🏻👍🏻

    love the knife, definitely going to want to buy one as soon as you get them out the door, though I would like a finer and more aggressive sharpen - I usually reprofile the knives I get to around 8 degrees per side, which is great since I don't do much meat with them anyways

    Wow, never thought you’d do a chef knife, I’m no culinary expert but that looks great. My sister is a chef in Edinburgh so maybe I’ll pick one of these up eventually for her. But for me, how about a folding pocket knife? I know I know, everyone asks, haha! I just lost my Fällkniven TK4 that I had for over 10 years, I’m bummed out.

    My favourite knife is heavily tapered in both directions. All the mass is on the spine towards the handle, and it gives a beautiful feel. Just something to consider

      Thanks for the feedback! This knife definitely has a taper in the blade, but not a really heavy taper. The handle is also pretty light because the blade bevel continues through the tang which removes a fair bit of weight!
