    Nice, I love Cortland apples. I have a small 3 year old tree, only 4 apples this year.

    "The flavor profile was deep molasses with a pinch of apple on the backend" sounds tasty!!
    For you as first timer, looks good :)
    I brew a cyser but with meadowweet!

      I was surprised by the amount of carry-over between cider making and mead making. It was quite tasty! I'm going to making a hydromel with Star Thistle honey and an apple blend tbd.
      What does Meadowsweet honey taste like?

      @@CiderWithKevin Yeah, almost like sweetness was still be there even in bottle condition.
      This is something would like to tried out myself, I'll let you know in future update!

    A tablespoon of pectic enzyme? Maybe that was where I screwed up. I only added a teaspoon and it took FOREVER to clear.

      So pectic enzyme clearing times are dependent on a lot of things: the concentration of the enzyme, temperature, and alcohol content. It's difficult to pinpoint how long much PE it will take to clear. I tend to go towards the higher side myself.
