This was a very helpful video...and I've watched many on the topic, my first effort was a big fail, so i tried again and this worked! Only used 1 qt heavy whipping cream (which cost me nearly 6 bucks sadly, and yielded a pint of perfect butter, Use High speed (10) for 1 min, then reduce speed to 5 for 2 more minutes while tamping - see large clumps appear, reduce to 1 to form ball, and done. Rinse or it will quickly become rancid. I dumped it into a mesh juicing bag, and plunged into ice water massaging slightly to rinse, then it was done. I used a Vitamix A3500
What's the difference between squeezing out the buttermilk by hand without using water versus in water? Have you tried both? I'm going to try this with my vitamixer so I'm just wondering before I do it. Thanks so much for your video.
Just squeezing may not get all the milk washed off the butter. You want to get all the milk washed off the butter if you want to keep it more than a day.
I sped up the video and did not have any sound. Thought water sound was better than silence. I hope you try making your own butter! It really tastes awesome!
More or less. buttermilk in is made from actual cream. Not a processed cream with yoghurt added (which is what is used in the video). It comes close enough though I'd think. Also, Store bought buttermilk is pasteurized after the process making it's shelf life longer. This would probably have a shelf life similar to, or a bit shorter than the yoghurt that's been put in (couple days, to a week?).
You should add other ingredients after you wash the butter completely and before you wrap it for chilling in the refrigerator (pretty much the end of the process shown in this video). You're right, but it's a little more nuanced. Certainly sharp blades would do a better job. However, these blades are stainless steel and since stainless steel is not very hard (compared to quality knife steels), they dull quickly. therefore it's better to not have a very keen edge on them, since that edge would just deform and not perform well anymore.
Which Vitamix are you talking about, I’ve had mine for four years, and the blades are pretty sharp. Pretty much all the Vitamix’s I’ve had, the blades are razor blade sharp.
@@BigCountrySo-CaL619 I've had a Vitamix for over 10 years and the blades are deliberately _not_ sharp. That's why they last 25+ years - the blades never dull. The power comes from the hp of the motor; not the sharpness of the blade.

The ice-cold water helps. flush out any remaining buttermilk. My guess is that your non-rinsed butter would go off much quicker than two weeks.

Yes, you add that at the end after squeezing the buttermilk out if you want salted butter.
My butter turned out bitter in taste . Can it be due to sour home made yogurt?
Yes definitely
The ingredients always determine how the end results will be I recommend having it in toast or a cake which is fruity

the blades are NOT sharp in vitamix blender cups. they are intentionally dull to pulverize everything into a smooth consistency.

When would we add salt?
After you finish washing the butter, you can add salt or other flavors (herbs, honey, etc) and mix it in.
How long to churn in Vitamix before one see the butter separating from buttermilk?
Typically about a minute. Make sure that the cream is very cold when you start as the Vitamix will heat it if churned too long.
