INGREDIENTS FOR JODHPURI SHAHI SAMOSA -
(HINDI)
मैदा - २ कप (२५० ग्राम​)
अजवाइन - १/२ छोटा चम्मच
नमक - १/२ + १ छोटा चम्मच​​
खाद्य तेल - ४ + २ चम्मच​ + तलने अनुसार​
जीरा - १/२ छोटा चम्मच​
सोंफ़ - १/२ छोटा चम्मच​
हींग - १/४ छोटा चम्मच​
धनिया (दरदरा) - १ छोटा चम्मच
हरी मिर्च - २, बारीक कटी हुई ​
अदरक - १/२ इन्च (कद्दू कस​)
काजू - ८ से १०
मटर - १/४ कप​
आलू (मध्यम आकार​) - ४, उबले हुए
लाल मिर्च पाउडर - १/२ छोटा चम्मच
हल्दी पाउडर - १/४ छोटा चम्मच​ ​
अमचूर पाउडर - १/२ छोटा चम्मच​
गरम मसाला - १/२ छोटा चम्मच​
चीनी (पीसी हुई) - १/२ छोटा चम्मच
किशमिश - १ चम्मच​ ​
धनिया के पत्ते - १ चम्मच​

(ENGLISH)
All purpose flour - 2 cup (250 gm)
Ajwain - ½ tsp
Salt - ½ + 1 tsp
Edible Oil - 4 + 2 table spoon + to deep fry
Cumin seeds - ½ tsp
Fennel seeds - ½ tsp
Asafoetida - ¼ tsp
Coriander seeds (ground) - 1 tsp
Green Chilli - 2, finely chopped
Ginger - ½ inch (grated)
Cashewnut - 8 to 10
Green peas - ¼ cup
Potato (medium size) - 4, boiled
Red Chilli powder - ½ tsp
Turmeric powder - ¼ tsp
Amchur powder - ½ tsp
Garam Masala - ½ tsp
Sugar (powdered) - ½ tsp
Raisin - 1 table spoon
Coriander leaves - 1 table spoon

Thank you for showing Jodhpur samosa recipe. This Friday I am going to make. Almost 20 years before I ate samosas in Ajmair and I keep thinking about that samosa , it was very very tasty. I think it was different garam masala too and that makes difference in taste.
