- Eat Seeker gets right to the meat of a restaurant's story. Each episode focuses on a single chef or owner from some of the best, most innovative restaurants all across the country and gives you a behind-the-counter look at their process and how they make some some of the most exciting dishes in America. From Michelin star restaurants to tacos trucks and pizza shops, we got you covered. What is the chef’s vision, and how do they make it happen? What’s the story behind the food? What’s the food behind the story?
Chef Justin Bazdarich of Oxomoco loves wood-fired cooking. He loves the smoky flavor the fire imparts on his food and he thinks that could just be the key to creating craveable dishes. At his new restaurant, Oxomoco, in Greenpoint, Brooklyn, he matches the smokiness of the wood fire to smokiness in Mexican ingredients like dried chiles. His menu traverses the whole country of Mexico, highlighting dishes like tlayudas, green chorizo, and a grilled branzino paying homage to Contramar in Mexico City.

Check out last week's episode of Eat Seeker: thrl.st/2OlhKmM
Mexican and African American cuisine does the chicken justice. From tacos to fried chicken and so on, I feel like they elevate the dish to another level. In Germany we have no idea what to do with chicken lol
Lloyd B don't forget Asia too!
@@Djordjevicc true
Lloyd B as a Mexican i want to try German bratwurst!
@@OPTIC23100 it is truly delicious, also a very delicious dish is Rouladen. It's a must 😊🍻
White boy did his homework and figured a way to get his..👍🔥 he hustling NYC.
No one is gonna mention the Grateful Dead "Aoxomoxoa" album T-shirt he's wearing and the correlation to the name of the restaurant? Ok. Now, back to your complaints about them "stealing culture"...
P.S. These videos are terrific, @Thrillist, keep them up, please!
I’m hungry!!!...
Lots going on this episode. I ate at the restaurant (Contramar) in Mexico City mentioned at 1:45 but didn't have the "pescado a la talla" shown. It's a popular style all over the country especially coastal. But yes, Contramar is definitely a must visit. As for the tlayuda, I've never been able to wrap my mind around corn and mayo but this looks pretty good. I had the classic version with refried beans...simple and tasty. All the dishes here look delicious. 👍
Tosh T corn and mayo go perfect together, and its one of the most common snacks in Mexico, either esquite which is corn on a cup or just on a stick, both with mayo, queso cotija chilli powder or sauce and lime. And its all about the mexican non sweet corn, steamed or boiled with a mixture of herbs like hoja santa. In Mexico city there is this dude that puts bone marrow besides the other ingredients and in some places in the north of the country they prepare the corn on a cup with takis, flamin hot cheetos , doritos etc... Cant forget the instant ramen noodles cooked with the stock the corns haven cooked prepared with a variety of ingredients. Youll have the shits for sure but is worth it.
+TheBebop09 Yes. I know it’s very popular and saw it many times in CDMX but never got around to trying it. I’m not a huge mayo fan.
I see they’ve now done away with not only 5 dollar lunch... but also, is it really Dough? That just sucks. Both were pretty good and enjoyable. I’m at least enjoying eat seeker too just as much. Hopefully they don’t get rid of it too.

When you say Woodfired Mexican that means that's a person from Mexico. If you want to say Woodfired Mexican food that would make it much better on the eyes and the palate
Rodney Pratt he meant pseudo Woodfield mexican-styled
So the authentic mexican restaurants charges $10-30 while some white guy opens up a mexican food restaurant and all of a sudden he deserves a Michillen for charging $17 for tacos......
Donuts maybe he cook better then them.
@@baophan7768 Just went. It was good. Not sure if it's worth the price though.
Actually, there are several restaurants in the Michelin guide that offer a Mexican menu and 5 Mexican chefs have been awarded Michelin stars although they are mostly work in other countries. Mexican food is also considered Intangible Cultural Heritage of Humanity by the UN (along with Japanese and French cuisine) - all this work has been done by Mexicans.
This guy is sort of annoying
I love these vultures that go to other countries and steal culture, while not doing nothing for the continuity they’re stealing from but their defense will be (but I have employees from the culture in stealing) but are you giving them opportunities like making them partners? No... of course not 🤣

Why do i have to give someone a higher position in the company just because of their ethnicity. They need to prove themselves and be qualify for the position. I everyone base on their personalities and skills rather than the color of their skin or where they are from.
Stealth Bravo look
My parents are from Mexico and I see nothing wrong with other people using and spreading our culture around the world. You also see this with French food for example. This doesn't take away from the awesome things that Mexican chefs are doing around the world. There are several restaurants in the Michelin guide that offer a Mexican menu and 5 Mexican chefs have been awarded Michelin stars for example. Mexican food is also considered Intangible Cultural Heritage of Humanity by the UN (along with Japanese and French food) - all this was achieved by Mexicans.
There’s a difference between being inspired by something and ripping it off and jacking up the price. I’m no hater but damn you can’t go to a poor place eat the food study it and then bring it back to the city set up shop with someone’s else ideas and let the praise roll in. People who cook are artists and creatives as well.
Its still different and not completely ripped though. I get where you're coming from but that would mean every pizza place in America, especially those who own a wood fired oven should sell the whole pizza for 5 bucks max, since its the complete same dish as they make in Italy. Its a business, you should be able to charge what you want, especially when it's a busy restaurant.
I know right they making their money off of other people's culture
They aren't appropriating the dish, they credit the specific area and don't remix and refix the cuisine. There is a difference and this doesn't take advantage. Chefs have the creative license to use whatever inspires them and make good food.
they're so many upset about this, because there's white chefs making money off of ethnic food, now.
You are hating though... White boy hustling. Anyone including yourself can also do that and win 🤷♂️ don't hate the player , hate the game.
