The Hobo Casserole looks awesome! I remember seeing Hobos when I was growing up in the 50's and 60's. Sometimes they would walk down the alley behind our house looking for food on the garage cans. My father explained to us that there was a difference in Hobos and bums. He said the Hobos would travel from town to town on the trains looking for work and odd jobs to make a little money. During the depression era many of them had homes and families in other towns and would try to make enough money to send some home. They weren't seeking hand outs and were willing to do any work they could get. The bums were just beggars and didn't want to work and mostly begged for money to buy alcohol and/or drugs. He taught us to respect the hobos.
I remmeber we had them In 70s. They’d ride the rails . Our town had one, delis nobles was his name. He came in my dads business and was nice , my dad would give him food or probably a little $ but he’d sweep up etc Seems most smalls towns had one.
When I was groing up in the sixties in germany, we had no hobos. We had gypsies. They would pull their campers with a mercedes, and park on the the nearest campground. Than they would go house to house to beg for money. They where scary!
Great casserole. I live by myself and only eat at home. With this one and most recipes you share with us, I always take some to my neighbor who is 85 and doesn't cook. She loved this one.

I live in Washington State. In the 50's and early 60's , we would make hobo stew in a three pound coffee can at the end of our driveway. Just us kids. The stew was fantastic. We also had hobos the lived down the railroad tracks. The one man my mom gave food to would tell us kids to never go near the camp. I love this kind of food. Also enjoy your channel.

Since I don't eat meat, I think I will try this recipes with cooked lentils and then saute the onion and pepper. For the cream soup....I will make a base with oat milk, and then top with my plant based cheese recipe. I think it will be tasty. Thanks for the idea.

I tried this recipe tonight and the only changes I made based on what I had available was using ground pork instead of ground beef and some frozen potato hash instead of the cubed fresh potato. It was delicious! So great for a cold and snowy evening. Thank you!
Calvin, you cook as well as Marie. I'm sure she brags on your cooking too. I read some of the comments about the difference between hobos and bums. I don't remember SeeIng too many hobos growing up but I would hear about them every once in awhile from my grandparents. Now a days there are too many begging for a hand out. Not in our tiny town but in the larger city near by. Our church has what we call homeless bags that are filled with food and essentials, that way they get something good.
That meal looks fantastic just the way I love to cook. And Calvin love to listen to your stories as well. We have very few homeless here but when the trains were here they would live down by the tracks no one bothered them at all. They just stayed awhile and moved on. So can't wait to try this meal.

I made this casserole today and ate some. Found this dish to be very tasty. Leftovers are going into the freezer for future lunch meals, but next time, I will add a side dish or two instead of eating it all by itself. Thanks for sharing.❤
My Mother when I came home for lunch from my job I would ask her what she was cooking it smelled delicious she said it was stone soup so with eyebrows arching upwards I said really because I didn’t see no stones in but she told the story and great story it was. I’m sure if anyone who lives down south or maybe other places knew or knows what stone soup is. I miss listening to old folks stories. Have a great week ❤️
Don’t know if you ever watched Little House on The Prairie but there was one episode. Laura Ingalls was sick so her mother taught her class at school. But Ma Ingall’s told a story about this one man in the community had one potato, so he started going door to door asking if people had any vegetables but nobody would oblige him mmm. So he went to the middle of the town and built a fire put his kettle on and some water put a little salt in. People kept watching him & started to feel bad for him until one might have brought a carrot, one a onion, then pretty soon others started bringing things to add to th kettle it turns he really didn’t ha e a potato but a stone but someone did bring a potato. All he had was a stone but by the time everyone came an added something the moral of the story always be kind to Other with home or homeless because you met know whether you might find yourself in a situation like that. If you have something to spare please 🙏 share. That’s how Stone soup came along because others started bringing things all he initially had was a stone and that’s what he throwed in his kettle. A lot of them do not want to be in shelters, or in organized apartments that are subsidized, because there are rules that must be followed. What a great cook you are Calvin. Also, you look so handsome with your haircut. Marie is a very fortunate woman!
Loved your old hobo stories. I remember back in late 50's, there were always kids dressing up as hobos for Halloween. Think I would have some cornbread and maybe green beans with this. Printed your recipe and will probably make this next week.

He was always walking somewhere but the odd thing about him is he wasn’t per say nasty but he looked like a bum and not that clean he never had a vehicle but people would always especially back then those that knew him would. You would have thought he was nasty and always picking at his skin but when he needed a little a little money people would always give him something to do but when he passed away my Dad found out because the man lived by himself but he did have family close by but he had a speech problem because he died at home I believe or got sick and died at home or hospital but when people those that knew him he must have had a will or not but when they started searching his house to their surprised he wasn’t as poor as he seemed they found where he store money in canning jars in thee block foundation of his house almost a half of million he had saved his entire life. Calvin you are quiet the chef. I will definitely be making this version of the Hobo casserole this week. I have never put Cajun seasoning in mine. But I can tell by the taste test it is delicious. I love casseroles and simple comfort foods. Marie’s plate looked scrumptious with the fresh vegetables. Another great video. Thank you for sharing with us.
