    Good Afternoon,
Very good and interesting information. I have been experimenting with different short grain rice that is available in my area (Southern Indiana). My 1st bag was Akitomachi Super Premium from California and my second is Tamaki Gold, also a California rice. Both purchased from Asian markets and the later was said to be the store owners favorite go-to brand. The next time I shop, I will have to see if I can find some rice actually from Japan to sample. You have definitely piqued my interest!

Hokkaido is my favorite of the main Japanese islands, it’s beautiful during the winter and fall

A sushi chef at Roppongi once told me he prefers to use new crop short grain California rice for nigiri explaining that it wasn’t as sticky as Japanese rice. He said he purposely undercooked Japanese rice to keep it on the firm side. He also said the Japanese did a superior job in storing rice and hence stayed fresher throughout the year. It was an interesting discussion.
I bring back about 10 kg of rice every time I go to Japan. For regular steamed rice it is definitely better.

Look at how much energy goes into getting a bag of rice to show up at your grocery store.
I understand this when I eat rice. Leave no grain of rice uneaten on a plate. I always consider how much effort it took for growing it, harvesting it, processing it, packaging it, and marketing it. With this in mind, it seems like a terrible waste to even leave one grain of rice uneaten on a plate.

J V It’s not just the taste, it’s also the size, the texture, the firmness, the starchiness, its adhesiveness. There is more to the appreciation of rice than just its taste.
